I never cook on the weekends. Today for a late lunch we had Popeye's shrimp basket with mashed potatoes and biscuits. I swear, this is so good that you would think it came from a local seafood restaurant.

We stopped by Panera Bread and picked up some cinammon crunch bagels. I found out about these when someone from work brought them in and everyone was raving about them. They are delish - more like bread or dessert instead of a bagel and always super fresh. We'll have these for a snack later tonight.
 
Thanks so much. I had planned on making a roast this week and I realized I was the only one left on the WFD thread that hadn't made it yet! LOL!
 
For dinner tonight I'm making turkey meatloaf with a barbecue glaze, mashed potatoes and steamed spinach and corn.

I made those weight watchers cupcakes, too. I already had one and they're great! I made the white cake kind with Stewart's diet cream soda (bottled). I looked at labels, though and one cake mix brand had 210 calories and one had 170! I was surprised!

Nancy - I'm planning on making your "Should be Illegal Oven BBQ Ribs" one day this week and looking at the recipe it's for 4 lbs of ribs. I'm only using one rack of baby backs which are not in their original market wrapping, so I have no idea how much one rack typically weighs. Should I cut the rub and glaze by half???:confused3


Not Nancy (obviously :) ) but I would mix up the whole amount of rub and glaze and then just use what I need and refrigerate the rest. That recipe sounds awesome!

Dinner plans have changed. DS went out to lunch with GF's family and he had country fried steak and mashed potatoes.:rolleyes1 Anyway, I've been craving a good omelette and we have a new place that opened in my neighborhood that does breakfast all day. Sounds like a plan to me!:idea:

Hi All! I haven't checked in today...I was running all day. Church, DS friends bday party, cooking and my desktop is on the fritz so I am now hanging on DF's work laptop...:rolleyes:

We had braised pork chops (we really like these from the Martha Stewart show), Stove Top, mac and cheese and mixed veggies...I am fixing to make some cocktails now. We decided to try the South Beach Diet and no drinking for the first 2 weeks...:scared1: :scared1: :scared1: so I figured we'd get a last one in!!! :)

Sheryl, I did get to watch GW...I love that show! I did fall right out after that! I am sorry that you are having such a hard time finding a contractor...a new home sounds nice though. I'll say a prayer that it all works out. :hug:

Also, I don't know if you all care, but the Pastor said he will be available to marry us on 6/24...:cool1: and I bought my dress...I went with ivory.

Lindsay, you are gonna love the roast! That may be added to your hubby's fav list! :thumbsup2

liamsaunt- That plate looks better than meals served in many fine restaurants. I think you must be amazing to watch in the kitchen:worship:

Kathy- I agree with the others, I would make the whole amount of glaze ans rub. That derby pie is a really good one, isn't it?

Jean- cooking for growing boys is a full time job!

I did not cook today, I went to my Mom's house to go through one room. I love my siblings, but it was stressful, so I went furniture shopping with my Sis IL. No one else will go with me anymore, Marisa has had it, Buddy just wants the bill, and I can''t make a decision to save my life. So grinders for dinner and lemon meringue for dessert.... all from Big Y;).

I haven't made it yet either! But I'm gonna do it on next Sunday!!!! Sounds yummy. I love anything with ranch

I'm just sitting here waiting for my computer to finish it's updates then to bed I go. 5:00 am comes very quickly.
 
Lauren, I'm so glad things are coming together for the wedding. Having the minister and your dress are certainly two of the big things now done.

Tonight I made Glynis's Nacho Pie for dinner with some smashed pintos and southwestern rice. It was a big hit.

Tomorrow I plan on making Stephanie's chicken spinach pasta bake. Busy day tomorrow so I don't know if I'll have time to post.

shovan - the rack of lamb is DH's favorite. It's very EASY(oops)! you just season it with garlic powder, oregano, salt & pepper, sear it over high heat in a skillet with a little EVOO and finish it off in the oven. The cabernet sauce (Outback's recipe) is what makes it! What sushi restaurant opened up? We always go to Tennou on Manhattan Blvd. What areas are you looking for property in?

Madame Queenie, We had a sushi rest. open up on Barataria Blvd.! Little bitty place called Hina Hot, have you tried Cafe Zen on Wall Blvd & Belle Chasse Hwy. in the Winn Dixie Shopping Strip it's one of our Favorites!!! Haven't tried Tennou yet, my Aunt said it was very good we will have to try it! Isn't a rack of lamb a very large piece of meat? How do you sear it first? I am confused?

We first went look at the Gonzales area, we have now been checking out the Luling, Waggaman, 9 mile point areas along the River Road. Very high elevations ( at least in our area) as high as 20 ft. at 9 Mile Point in Westwego!!! No one else is allowed to laugh! 20 ft. is super high in the New Orleans area! Kathy, You would not believe how much development is going on there! Really huge homes! It looks so nice.

Lauren, GW is one of my favorites also! Thanks so much for being concerned about our contractor woes! The piece of property I liked, my DH is not sure we can even consider! So still don't have a clue as to what we are going to do.

Not to discourage you from the South Beach diet, but there is NO WAY I could manage anything that totally cut out my wine! About 5 years ago, I tried Weight Watchers. It really worked for me, because I had choices, dessert or a glass of wine. I lost 35 lbs. & have stayed below my goal weight for these 5 years! I thought that WW really taught me a lot.

Hey Y'all, I did actually cook this evening! If you can call grilling hamburgers cooking?

Hi everyone.:wave2: Dinner tonight was left over herbed basmati rice and roasted winter vegetables. The rice is super simple and really good. I'll have to post the recipe.

Tomorrow afternoon, I'm attempting to make brioche. I'll make the dough tomorrow and then bake it the next day. I've never made it before so please pray for me/keep your fingers crossed/wish me luck! :scared: :rotfl:


MinnieM - I've done the maple roasted bacon before - it is excellent and so easy!(oops here I go again):rotfl2:

I've never eaten it myself (I'm a vegetarian:) ) but everyone I've made it for loves it. And you're right, it is super easy and smells delicious! Although there are times when I am SO tempted to devour the whole thing of maple-roasted bacon. I swear one day, Ina Garten's maple roasted bacon will turn me into a meat eater for maybe 5 minutes. :rotfl:
 
Tonight I am making Glynis's Pot Roast. I am rather excited. Everyone says it's so yummy. I can't wait! I am adding carrots to the crockpot and having smashed potatoes on the side.

Can't believe didn't get on here at all yesterday. I actually worked a full day--I suppose one day a month isn't that bad. But that made DH in charge of dinner--they had frozen pizza!

I think tonight is going to be hamburgers on the grill and french fries. Since vacation is 5 days away, we are eating cheap and cleaning out the fridge. Gotta save all our pennies for that yummy Disney food!!!:thumbsup2

Lauren--How exciting that you now have the pastor and dress!!

Madame- How did the ribs come out? I looked at eh recipe that I took from the website and it was not clear at all. I am sorry :guilty:.

So Miss Zilla- seems like your special day is falling into place for you :cheer2:! Can you post a picture of the dress?

Sheryl- I hope that the contractor issues get resolved. I am always amazed at the brave people who build their homes. We did a major renovation in my home and I will never do that again. That was stressful to me, I would never survive what you are doing!


I am not sure about dinner tonight. DD has the day off to take Kady for her quarterly checkup with the gastro guy so I want her to come with me to the furniture store if she can stand the pain :rotfl:. DH said to go get something.....anything! He said even if we stick it in the basement after we finish that....(:scared1:) it will be fine, just pick something!
