I have no idea how to season the flounder I bought. I think I am going to put it in a foil packet with some butter spread stuff and lemon...what else??? I am lost. Maybe salt and pepper?

I'm a fish lover and I think a flounder needs very little - exactly what you were thinking - butter, lemon, s&p!!
 
Sure did! There are very few desserts that I really love - I'd have to say that served warm with a scoop of vanilla ice cream, it is pure heaven.:cloud9:

Just like a chocolate chip cookie right out of the oven!
 
Well, I'm all caught up.

The week with my mom was really nice! We got to do some real good visiting. I just love spending time with her!

Now I'm home, and trying to reclaim my house. I just don't understand how one grown man and 2 semi-grown children can do what they did to my house in just 5 days!!! I've got the kitchen and living room cleaned and back to normal, but I may have to take a jackhammer to the bathroom!!!

Dinner tonight will be some kind of chicken. I had that in the freezer, and now I have to figure out how to cook it, and decide if I need to go to the store.

It's so nice to be back and to read all about what you were up to! I really missed chatting with you all!
 

I might be too late for you, FormrCastMbr, but one of my favorite ways to do flounder in a foil packet is to saute some onions or leeks and carrots, sliced very thin, in a little butter until soft. Place these on foil, add the flounder on top, season with salt, pepper, and lemon juice, a dash of white wine, and a knob of butter. If you want to be fancy you can add a little truffle oil too! Wrap up the foil packages and bake in a 425 oven until just done--10-12 minutes.

Tonight I am making a nicoise salad with the leftover tuna from Saturday.
 
Thanks Kathy and Liamsaunt. I did wrap them up already...I put lemon s&p, parsley, paprika, butter and a touch of EVOO. Next time, I will try Liamsaunt way.

That Derby Pie does sound delish...it may be on the Easter menu!

Wow! Tonights dinner was delish and I made it up as I went along.

First, when Winn Dixie has their buy 1 get 1 free frozen, peeled and devained shrimp - I stock up.

So today I took a pack out of the freezer and thawed it. Then I put some butter and olive oil in a pan, and used veggies we had in the fridge. Half of a bell pepper, broccoli, 1 stalk celery, 1 tomato - all cut up small. I put the veggies in the hot oil then added the shrimp, salt, black pepper, cayenne pepper, a dash of Italian seasonings, and a dash of Tabasco. Then I sauteed everything until the veggies were soft and the shrimp were cooked. I boiled some spagetti and tossed it in with the veggies. After it was dished onto plates I sprinkled some parmesan cheese on top.

It was fantastic! :banana:

I had a really busy day today, so all we did for supper was a quick tomato sauce with garlic, whole wheat spaghetti, and plenty of fresh grated parmesan cheese on top, plus a large salad with a delicious vidalia onion salad dressing that I bought at Costco last week. (They were giving out samples of it and it was SO good I bought two large bottles. I thought they'd last ages but we all like it so much that it may not last nearly as long as I thought! The "sample lady" said it was good to marinate and cook chicken and pork too so I hope to try that soon.)

Kathy- I mix the dry ingredients and rub on the ribs. Then I mix the BBQ sauce with the honey, the maple syrup and the vinegar and pour it all over the ribs. After they have been in the oven for the 2 1/2 hours I remove them from the pan, reduce the sauce in the pan and then I glaze the ribs with the reduced sauce. I am going to go back and clarify the recipe. It is very confusing.

Lauren- The dress is gorgeous and the arrangements that you have chosen are beautiful! Please keep posting links if you can, I love weddings!

Glynis- Welcome back! I'm glad that you had a wonderful visit with your Mom, but do not envy your adventure in the bathroom :eek:

I did not cook this evening. I was gone all day and helped DH redo our planting bed in the front yard. Well, he redid it I just told him how I wanted it shaped and where to put my plants. (I hope they survive, the ground is still frozen in spots and he was hacking around my poor plants)
I did drag DD and DGD back to the furniture store and bought a few pieces :thumbsup2

Lindsay I too am glad you weren't hurt hopefully they can fix your van quickly and cheaply.

Tonight we had chicken from Costco. Hopefully tomorrow I can grill weather permitting. I have an awful taste for grilled sausage and onion sandwiches. Maybe potato packets. I hope the storms hold off until after dinner.

I think I'm going to try the Lite cupcakes and try them out on the people at work and then tweek it a little maybe a lite version of carrot cake. What do you all think?

I really need to lose this baby fat. My baby is 12 1/2 perhaps its time:rolleyes:

ETA: Glynis, Glynis, Glynis. Lock your doors and turn out your lights. My husband is coming to kiss you for posting the roast recipe. :lmao: Girlfriend, that was the most AWESOME roast I have ever had. I will NEVER make it any other way again. I'm drooling now just thinking about it!
 
Lindsay Sorry about the mistake I was thinking about my Cousin he has a van she wife drives him around in with his chair. I hope today is a better day.

Tonight the weather will decide if I get to grill or cook inside. :sad2: Oh I'm going to make those Cupcakes with peach fresca. That sounds like a good combo.

Don't worry about it :) Most paras and quads do drive vans. I know I will have to eventually. I am fighting it as long as I can.
 
Good Morning All,
Today I am roasting chickens with mashed potatoes, gravy, and veggies. I'm not sure how I will season them. I want to make sure that I include all of Kady's favorite foods in this meal. I told you she was going to her Gastro guy yesterday for her quarterly checkup and it really was not good. He scheduled her for an endoscopy tomorrow at 1 PM but she needs to fast from 9:30 PM this evening. I know that she can have some clear jello in the AM if she wants, but I want to make sure she eats a good meal tonight.

If you can, please send some P&P for her and for Jeff and Marisa. My DD did not see it coming and she is a mess.

Tonight we'll be having Nancy's Illegal Oven Ribs, sweet potatoes, baked beans and cole slaw. YUMM!!

Nancy, my favorite way to season a roasted chicken is simply to use real butter, minced garlic, rosemary and a few sprinkles of paprika ~ comes out perfectly every time! :thumbsup2 Prayers being said for your family ~ hope all goes well!! :hug:

Today I'm making a sesame ginger stir-fry with sirloin strips, baby corn, water chestnuts and I'm thinking broccoli tossed with asian noodles. :)
