Hi everyone -

We had Mom's funeral yesterday and she looked more beautiful than she has in many years. I'm doing OK one day, the next day not so good.

Kathy, I thought the same for my Mom, all of the ravages of her illness disappeared and she looked as though she was finally at peace. She looked as beautiful as she did when my niece was married. Your days will probably go up and down for a while. I am still not on an even keel, and my family has resigned themselves to adjusting to my moods. Now as for cooking, I admire you. My family still is grateful if dinner is not burned or smoking or if it is somewhat on time.



I don't know what I will fix for dinner. Something with the leftover ham along with a green salad. The dressing came out really well so we are going to have it again tonight.
 
Tonight is kind of odd. I'm hosting book club here so I'm focusing more on those recipes than my families dinner. Horrible, I know. The family is having chicken nugget casserole, french fries and a salad. Then they are banished to the family room in the basement while book club is here. I'll get them some cookies and chocolate milk to have while watching a movie down there. Thanks to my DH, it should be just fine!

Now, my book club ladies are getting the good stuff. Our book this month was Rebecca by Daphne du Marier, so I'm doing a kind of English tea. We are having:

Afternoon Tea Scones with spiced honey butter
Dried Cherry Scones with cherry preserves
Rasberry/Almond tarts
Angel Food cake with Rasperry Sauce
Tea
Cider
Cocoa

What do you think? Any other suggestions?


My suggestion would to be to provide something savory. All of your dishes are on the sweet side, and sometimes it is nice to have something a bit savory to balance things out. Cucumber sandwiches would go nicely, or a spinach dip, or just something else simple but savory.

Tonight for dinner I'll be having a new pasta dish that I am trying out. It has ham, cheese, cream, and onions. Now how could that be bad, but I'll let you know.:thumbsup2

I thought about doing something savory. However, book club meets just after dinner. Do you think that's something to take into consideration? I do have the stuff to throw together some cucumber sandwiches if needed.

Tonights dinner was good. I fixed a huge chef style salad with romaine hearts hard cooked eggs, leftover ham nuts cranberries and onions with the honey lime dressing. DH added ham sandwiches to his salad. No one wanted a hot meal, although it is so cold I would have guessed otherwise :confused3.

It's been a while since I posted, but I had to tonight because I made a pierogi recipe I got at the Food and Wine Festival eight years ago. I made a few adaptations...no way was I making the pasta from scratch!...but the end result was pretty true to the original, easy to make, and really awesome to eat. The directions sound long, but the actual work time was pretty short, and several steps could be done in advance...the filling could be made ahead, the pierogies could be stuffed a day in advance (or even frozen) and the pierogies can be boiled earlier in the day and then sauteed in butter and onions later.

Pierogies (adapted from Epcot's Food and Wine Festival)

Cheese and Potato Filling:

2/3 cup mashed potato (I just boiled 2 potatoes in salted water until very soft and then mashed them with a potato masher in a tbsp of butter. However, this would also be a great way to use leftover mashed potatoes.)
1/2 cup Dry Cottage Cheese*
1 tbsp sugar
1 egg
1 egg yolk
1 tsp lemon juice
salt

Put cheese through sieve and then mix well with other ingredients.

Filling can be made one day in advance and stored in refrigerator.

* I used fresh ricotta instead. I just drained the cheese in paper towels to get most of the liquid out. You could do the same with regular ricotta or cottage cheese, but since these have more liquid, you might want to let them drain for several hours or overnight.

Assemble Pierogies:

Use wonton wrappers, but since they are thin, double them to more closely resemble pierogi pasta. Place a spoonful of the filling in the wrapper, then use water to seal the edges. Depending on the shape of the wontons used, you could end up with triangles, half circles or rectangles. Just make sure the edges are tightly sealed and don't overfill. Put assembled pierogies on a sheet lined with wax paper until ready to use, or refrigerate pierogies until ready to boil.

If desired, freeze pierogies on a cookie sheet lined with wax paper, then once frozen, pierogies can be stored in plastic freezer bags until ready to use.

Cook:

Boil pierogies in a large pot of boiling, salted water in small enough batches that they aren't touching. Make sure you stir a couple of times to make sure they aren't sticking to the bottom of the pot. When pierogies float, remove gently with a slotted spoon to a plate or tray.

Finish:

Saute a finely chopped onion in butter in a frying pan until soft and lightly browned. Remove. Put additional butter in the pan, add the pierogies and cook until the sides are browned. When almost done, add the onions back into the pan. Serve with the onions and sour cream.

If you want, you can eat the pierogies without the final butter saute step. However, I wouldn't.

I think I am going to make Frikadellars...these are like a meat patty - I think they are danish. The boys like them. I am not sure about the sides yet.

Last night we had spicy seared tofu with snow peas and fried rice. It was good! DH even had seconds.

Tonight is red meat night for DH: I am searing him a strip steak and then slicing it, covering with chopped rosemary and sea salt, then finishing with arugula and lemon juice. I am making myself an omelet and an arugula salad, and we are both having crusty bread. DH went off to work puzzling over what kind of wine will match both steak and an omelet, but he has all day to figure it out.
 
Pizza day here too! :) I got the take and bake pizza 16" (cheese) from Wal-Mart. Going to add pepperoni and more cheese. Nice size pizza for $6.98. Going to give it a try. :)

We really like these pizzas. You can get the pepperoni or the cheese for $6.98. The supremes are more but very good.

Tonight will be Lady & Sons fried pork chops. I said that would be yesterday but I had a ton of errands to run and ended up just doing pizza burgers instead.

Aw man! I didn't see the pepperoni! Oh well. Next time. I've got to try Paula Deen's pork chop recipe. I'm sure it's great!
 
No cooking for me tonight, we'll probably do Chinese. Last night's bacon cheeseburger meatloaf was just OK for me & DH, however anything remotely resembling a bacon cheeseburger is a hit with DS! Probably will not make it again.
 
I think tonight will be ham and swiss casserole. Of course, it all depends on what time I get back from running kids to music lessons. DH might just take it upon himself to make dinner. If tht's the case, we'll have tomato soup and cheese sandwiches.
 
Last night I made Oriental Chicken & Rice, one of my favorites, but DS doesn't care for it.

I don't feel like cooking tonight so we're just having doctored up frozen pizzas. Publix has DiGiorno on sale for $3.99.

Tomorrow we're going to DH's brother's house for a cookout. I'm taking Crockpot Calico Beans.
