We had Chinese last night!!! I love that every once in a while.

Tonight it's NY strip steaks on the grill, garlic/cream cheese mashed potatoes, baby peas and I think I'll make some homemade rolls. We got a dusting of snow here so we're going to use the gas grill and at least make the neighborhood SMELL like warm weather!:thumbsup2
 
No flames from me for using Stove Top, well not unless I set the kitchen on fire :eek:! My family loves the stuff so I fix it with poultry all the time.

Tonight I am having Glynis Pot roast. I think I will cook it in a dutch oven, though because I need to fit two roasts in with the veggies.

Reading Kathy's cupcake dilemma has me thinking of the super bowl. Would anyone like to start sharing some yummy super bowl food? I am especially looking for some do ahead items that can be kept warm in a Crockpot or something that does not really need to be reheated at game time. My sister's BIL lives in an assisted living facility, he has CP. They are watching the game at his home so they can all be together and she needs food that she can bring as he really does not have a lot of kitchen space. I can come up with some recipes, but I know that you all must have some tried and true that you use.

Today I'm doing an Italian Roast recipe that I found many years ago. It is full of very intense flavors and takes a long time to prepare, but it is awesome. I'm also going to make the lemon/parm broccoli.
 

Friday night I made Potato Chip Chicken, Stove Top Stuffing and broccoli.

Last night we got subs from Publix.

Tonight I'm making baked rigate in meat sauce, peas and mozzarella garlic rolls.
 
Today I made a maple-thyme-butter basted turkey, mashed potatoes, awesome macomber turnips pureed and topped with fried shallots, broccoli, simply steamed with butter, and two types of stuffing/dressing--one was traditional leek-bread-cracker type, and one "New England style" with roasted garlic sausage, dried cranberries, and apples. Tom Brady looks O.F.F. OFF!! Sorry...anyway....we are now having lucky nuts and a most incredible cheese platter and some olives.

Here is my lucky nuts recipe, since I know you New Orleans fans are going to want it when you are in the Super Bowl. (Don't tell DH I said that!!)

Lucky Nuts

Oven 350 degrees

1 to 1 1/2 lbs whole nuts of your choice (I like a mix of cashews, pecans, and almonds)
3 tbsp. butter, melted
2 tbsp. fresh rosemary, chopped
1/2 tsp. cayenne pepper
2 tsp kosher salt
2 tsp. dark brown sugar packed

Bake nuts 10 minutes. Combine with everything else, and serve warm.

liamsaunt - Congrats on the victory, I just love Tom Brady! Who knows maybe it will be the Saints vs Patriots, OMG I get so nervous just thinking about it!! I'm trying your Lemon Balsamic roasted chicken recipe this week, can't wait!

Almost forgot, I noticed you brine your turkey. Do you always do it? I've seen it done on the Food Network so many times and have never tried it. Does it really make it juicier? Do you have a special brine recipe?
 
Tigerkat--I sure hope it's not the Patriots vs. the Saints cuz then we have a conflict of interest here. A family friend of DH's (DFIL coached with his dad) is the offensive coordinator for the pats, so we always root for them. However, knowing DH he will root for Brees over friends anyday!

Burgers were good tonight--DD wanted a second-- the child who refused roast chicken and potatoes!
 
Good Morning! Dinner was good last night, the pot roast was good in a dutch oven on the stove top. I served it with carrots, potatoes, onions, and green beens. I also had a hot crusty bread. So good! (My family was a little worried because after the fiasco the other day, I told them my plan was not to burn the house down.)

Tonight I have a New England boiled dinner planned. It will be nice to have as we are experiencing some nasty weather. Rainy and raw with a cold front moving in. I hope the roads don't freeze because my DS is bringing a woman who he works with home. She is a renaissance seam stress and she made a blue Aurora dress for my DGD to wear when I take her to the princess tea at the GF. Tonight she is fitting the dress to Kady and I was starting to get a little worried because we leave for Disney on Friday.
 
I guess WFD depends on what I find at the store this afternoon. Probably roast chicken and stuffing--maybe some green beans as well. Need some kind of comfort food here--it's rained 6 inches since friday night,and now it's going to get cold! Can't win!

Not sure yet about today, but I can tell you what we had yesterday!

We had Spinach Squares (which are like a spinach quiche, but baked in a 9 by 13 pan and then cut into squares to serve), with Kale and potatoes as a side dish, and some baby carrots with dip as well.

Spinach Squares
1 bag of fresh (not frozen) baby spinach, chopped (about 4 or 5 cups)
3 eggs
1 cup milk
1 cup flour
2 cups grated cheese
Salt and pepper

Mix all together, spread in greased 9 by 13 pan and bake at 350 degrees for 20 minutes. Should be firm when cooked. Cut in squares and serve. Good with salsa or ketchup.


Kale and Potatoes (which actually tastes really good)

1 large bunch of kale, chopped
4 or 5 small to medium potatoes, diced
I cup of water

Put these in a deep frying pan, turn heat to high until water boils. Then turn down the heat and put lid on frying pan. Let it simmer for 10 minutes. Remove pan lid and let it cook until the water evaporates (watch closely at this point so it doesn't burn!). Put kale and potatoes in a bowl.

Add to the pan:
1 or 2 tablespoons of olive oil
3 cloves of garlic, minced
1/2 tsp. black pepper

Saute garlic and pepper for a minute or two over medium heat - don't let the garlic burn. Pour over the kale and potatoes and mix well. Serve right away.

Oh, it's not really a recipe, I use store bought rolls. I just cut the rolls in half, butter them, sprinkle with garlic salt, top with shredded mozzarella and broil until the cheese is melted. Pretty much just garlic bread with cheese.

Yes, I usually brine my turkeys and chickens. I use a wet brine for turkey--just salt and some sugar dissolved in cool water. I try and brine for at least 24 hours for a turkey. I think it makes the meat moister and more flavorful. I usually dry brine my chickens--sprinkle a couple of tablespoons of salt over it and let cure for a few days. In both cases, be sure to rinse and dry them throughly before cooking so they are not too salty.

I'm still deciding on the menu for tonight.
 
Is there a thread about only crock pot recipes? I am looking for some kid friendly meals for the crock!

I've got some crock pot recipes I'd be happy to share. What kinds of things do your kid like? Let me know and I'll start posting.
