I'm making some appetizers for us tonight - guacamole and chips, cocktail meatballs, coconut shrimp and hot wings!

Do any of you know a good recipe for Mexican cheese dip?

We really enjoy the cheese dip at our local Mexican restaurant and would really like to be able to make it at home. I'm not even sure where to begin. It's a white cheese dip. Might that be goat cheese?

Can any of you help me? Thanks :)
 
I'm making marinated grilled chicken breasts, not sure about the starch or veggie yet.

Later DS and I are going to make Chex mix and Pina Coladas (no rum for him). I might make bacon wrapped shrimp and/or bacon wrapped water chestnuts too. DH has to leave for work at 10:30pm so DS and I will be by ourselves for the ball drop.

Then....lots of junk for NYE! pizza rolls and shrimp for sure, and then I havent decided what else.
 
For dinner tonight we are having orange glazed chicken wings with brown rice and corn.

It's only our little family for the ball drop, and I think the kids will conk out early. I'm making Chex mix, clam dip, and we're doing fondue. I'm making pizza fondue with breadstick dippers, hot oil fondue with clam strips, chicken strips, shrimp and jalapeno popper dippers, and chocolate fondue with graham crackers, bananas, pretzel rods, pound cake and strawberry dippers. Should be fun!

Today we are going out somewhere and going to the movies. No cooking for me, woo hoo!!

We had turkey yesterday so it will be hot turkey sandwiches tonight!

Hey all! Just got back from our Christmas trip to the il's. I think we have pizza in the freezer, so that's wfd tonight!
 
Last night's menu came out so awesome! We had people over and this is what I served:

First course: Fried oysters with a mustardy-dill dipping sauce, and champagne

Second course: tuna tartare with avocado on a sesame wonton crisp, smoked bluefish pate on a garlic-chive cracker, and more champagne

Third course: stuffies! Quahogs with a buttery garlic-parmesean bread stuffing, and chardonnay. One of the men present actually got down on his knees and kissed my feet after he ate this!

Fourth course: minature fresh cod cake with homemeade tartar sauce, a little arugula salad with flowers on it, and scallops mornay. More chardonnay.

Fifth and main course: flounder rolled around a cherry tomato-panko stuffing poached in white wine and butter, served on a bed of spinach, and linguine with white clam sauce. Viognier to drink.

Dessert, my sister's holiday cookies...espresso, erm, more wine...:scared1: (don't worry, all my guests were spending the night!)

It was all so yummy!

Today I rousted the crew and we made comfort food: roasted chickens, mashed potatoes, lemon-thyme gravy, roasted asparagus, and roasted brussels sprouts. We ate really early so I am making a pizza for snack in a couple of hours--it will be pesto-tomato-mozzarella, nice and simple.

No cooking for me yet...we are getting chinese take out...tomorrow will be meatloaf.

Ribeyes marinated in olive oil, garlic, and herbs and twice baked potatoes with a garden salad.
 
Tonight we're having Shepherd's Pie. I'm a bit "fooded" out from the last week or so. It will be nice to get back in the habit of cooking again!

Of course, I leave Thursday morning for WDW, so not a whole lot of cooking for me this week. I can't wait to try some of the treats at WDW!
 
Tonight I am trying a recipe called Cream Cheese Chicken....
Breasts stuffed with a cream cheese mushroom mixture covered in sweet honey glaze and pecans....I am serving with a salad and some pasta.
 
Hubby was working tonight so dd and I shared a can of progresso chicken soup and had salads :sad2: . She wanted Subway but we are "pantry eating" for the next few months.
 
We had a fruit stuffed pork roast with sauerkraut and mashed potaotes, and peas, corn,carrots.
 
I have got a very busy day ahead of me. Hubby is off today (federal employees, boo hiss) but I'm not. We've got to take his car off to have some body work done (he backed into a mailbox. Barely scratched the mailbox, completely totaled his rear bumper). After which he will drop me off at work. He will come by later and work out with me.

Anyway, tonight I am making black bean soup (not chili like usual) with a nice salad.

Good Morning all!

We are having meatloaf and I am not sure of the sides yet. DFI is home sick today with the stomach bug...DS had it the yesterday. Hopefully, they will be able to eat...

Chili for us tonight--I'm babysitting today, so no chance to run to the grocery store--so I'm scavenging the cabinets for food--at least i have some ground turkey in the freezer and the canned tomatoes and beans in the pantry. REALLY need to go to the store!
