We had Christmas leftovers last night.

I think we're taking DS to see Night at the Museum and then maybe go out to eat. We have a Red Lobster gift certificate so we might go there.
 
It's an easy night for us! We are having tacos. I'm trying to use up all the food in the house. DH and I are leaving for WDW in a week for the half marathon! I'm so excited!!!! It's my first time at WDW ever, and my first half marathon. I haven't talked much about it here, but last year I weighed 100 pounds more than I do now. I had gastric bypass surgery and I've spent this last year losing weight, and training for the half marathon. I never in a million years thought I'd ever be able to do something like this, but I am!!! I'm also going to celebrate my 40th birthday while I'm there.

Chicken strips, steamed vegetables, leftover mashed potato casserole and plum pudding cake.

I'll be out of pocket for a few days. My DD and I are going to a church youth retreat. No cooking for me, but I get to be "mom" to a bunch of teens for three days. ;) DH and DS are going it alone while we're gone.

I look forward to being back to the DIS and some new recipes soon.

We are having leftover spaghetti and meatball stoup tonight. I made the meatballs a little different. Instead of regular Parmesan I used the herb blend I had left in fridge. It's Parmesan with basil, garlic, and parsley. It made the meatballs extra good!

Back to work today for me, after two long weeks.:sad2:

Tonight I'm making 40 clove garlic chicken, rice pilaf and a salad! YUM!

Is this a la Ina Garten?? :) I saw her make this on Food Network recently and it looked so good, but looked like a lot of work.
 
I have NO plan. I have fallen off of the meal planning wagon and I desperately need to climb back on. I'm tightening the proverbial belt around here and a big part of that is getting a plan and sticking with it.

Details, pictures, etc. I am so excited to finally be getting to WDW. I got to DL at least once a year, but I've always wanted to experience WDW!

Well, I forgot to thaw the ground beef for tacos last night, so instead we had Chicken and sweet potato curry in a hurry. It's become one of my favorite recipes from this thread! Tonight will be tacos.
 
Glynis, congratulations! That is a great achievement.

Last night we had people over so I made a sort of italian mish mash and evryone could take what they wanted. I had penne with red sauce, meatballs again with red sauce, gnocchi that I made from fresh ricotta in a roasted tomato sauce, a mushroom-carmelized onion-pesto fritatta, arugula salad, and bruschetta.

Tonight DH and I are eating with my parents. We (or rather, they) are doing a steak tasting. We have a bone-in ribeye, a strip steak, a filet, and a boneless ribeye that we are going to grill and then everyone will taste the different cuts. I am making two flavored butters for the steaks--cilantro-chili and blue cheese. Other items on the menu are a pasta gratin with gruyere cheese, green beans with almonds, and butternut squash pureed with cinnnamon.

Cranberry Upside Down Cake

1 box Butter Cake
1 can WHOLE cranberries (not jellied)
Butter
Brown Sugar

I used a disposable aluminum ROUND casserole pan. I like the pattern it leaves on the side and it is big enough to handle the whole box of cake mix. Grease the pan and spread a good amount of butter on the bottom. Sprinkle brown sugar over the butter. Spread the can of whole cranberries over the brown sugar/butter mixture. Pour in cake batter. Bake at 325 for an hour and check. It is a lot of cake batter so depending on your oven it might take longer. Once it is cooled, flip it over and serve.

I tried this with fresh cranberries and it wasn't nearly as good. My stepmom said she liked it better than pineapple upside down cake and it was a hit.

Glynis--Have a blast and good luck! I'm in training for a marathon in March and will be doing the WDW one next January! Wish I could be there this year!

Just thought I would pop in to let ya'll know I"m still alive--haven't cooked a lick since we got here last Thursday--and don't plan on cooking until I get back New Year's Day. Hope everyone had a wonderful holiday!

We too loved LeCellier, and I agree way too much food, but sure is worth the $$$.

So is a butter cake mix a regular yellow cake mix? This sounds great! We are having company over this weekend and this sounds perfect to serve!
