Less then two weeks till Christmas eek! This year has just FLOWN!

I only have one pressie to buy if I can ever get to the shops! Monday was the first day in three weeks I hadn't been called in to school or been busy with other things and my car battery was dead when I went to go to the Plaza, go figurin!

Then today I was getting ready to leave and got a call at 9:10 from a school asking me to come in :rolleyes: ahh think of the money at least!

Plus all of the teachers who are temporary will be full time temporary again at the school next year, so no-one going back to casual woo hoo! I know I'm the second to get called everytime so not bad for my first two terms :blush:

Hope everyone is having a good night, I'm editing PP+ photos before they expire, realised two days ago how to save in different sizes so will have to go back through the first 500 or so once I get through the last 100 :rotfl2:
 
I will post the recipe tomorrow. Hubby said that because I used the spiced gold Captain Morgan rum I wouldn't taste it like I would with Bundaberg rum. I prefer the Captain.
 

Rum balls


250g packet milk arrowroot biscuits
395g can condensed milk
1 cup coconut
1/4 cup cocoa
1.5 tblspn rum or to taste
Extra coconut for rolling of can use use sprinkles or extra combined cocoa and icing sugar

Crush biscuits with a rolling pin or food processor, combine with all other ingredients except for the extra bit for coating.

Dampen hands and roll into balls then it on a baking sheet lined with baking paper and refrigerate until firm.

I found the 250g pack of biscuits made the mix a bit too dry so you could leave some out before crushing. Next time I'll add some chopped up sultanas too as I lovd sultanas and it would make the mixture juicy.

I'm not sure I'm going to find the time nor the inclination to make rum balls this year. :scared1:
 
PIO. We have a daily production line. I think we have withdrawals from not having them last year. The girls are making them themselves so not complaining.
