I need something else to do with the leftover chicken. Oh, if you use the right amount of veggies and chicken, it tends to be a little soupy. I add all the chicken I have (including wing/drumstick meat, more than the recipe calls for), plus sometimes extra veggies. I like it thick.
It's great for using all the meat, because the wing and drumstick meat can be unattractive looking unless it's sort of hidden in something like this!
But I need to figure out something else to do with the leftover chicken because we're tired of this. What do you do with leftover baked chicken? I suppose I could throw it into bbq sauce for sandwiches, or maybe teriyaki or sweet-sour sauce and put it over rice? DH loves rice, but whether he can eat stuff depends on how much fat/salt is in the sauce, I suppose.
