Weather has been weird here as well. It will rain and get windy for like a half an hour and be done. I feel like I am living in Orlando again, with the fly by storms daily.

Easy Mexican Lasagna

This simple and delicious one-dish supper calls for almost
no preparation (especially if you buy precooked, cut-up
chicken).

3 cups chopped cooked chicken breast
1 (15-ounce) can black beans, rinsed and drained
2/3 cup canned diced tomatoes and green chiles
1 teaspoon garlic powder
1 teaspoon ground cumin
1/2 teaspoon pepper
1 (10 3/4-ounce) can fat-free cream of chicken soup
1 (10 3/4-ounce) can fat-free cream of mushroom soup
1 (10-ounce) can enchilada sauce
Vegetable cooking spray
9 (6-inch) corn tortillas
1 cup (4 ounces) low-fat shredded Cheddar cheese
1 cup (4 ounces) shredded Monterey Jack cheese
Toppings: shredded lettuce, nonfat sour cream, mild chunky salsa, guacamole

Cook first 6 ingredients in a saucepan over medium heat 10 minutes or until thoroughly heated.

Stir together chicken and mushroom soups and enchilada sauce in a saucepan; cook, stirring often, 10 minutes or until thoroughly heated.

Spoon one-third of sauce into a 13- x 9-inch baking dish coated with cooking spray; top with 3 tortillas. Spoon half of chicken mixture and one-third of sauce over tortillas; sprinkle with half of Cheddar cheese. Top with 3 tortillas; repeat layers once with remaining chicken, sauce, Cheddar
cheese, and tortillas, ending with tortillas. Sprinkle with Monterey Jack cheese.

Bake at 350° for 30 to 40 minutes or until lasagna is bubbly. Serve with desired toppings.

*To lower sodium, choose reduced-sodium soups, canned tomato products, and cheeses.

I use flour tortillas instead of corn but it's good either way. I don't use FF anything, but will get reduced fat soups. We don't like FF or LF cheese so I use the real thing. This freezes really well too.
 
You all have been very chatty tonight however my computer is soooooooooooooooo slow. It seems fitting as my day has just been not one worth repeating. Nothing major in light of things that some are dealing with, so I won't complain, except that I went and got my hair cut this evening and I want to :sad1: The stylist understood what I wanted or so I thought. But when I look in the mirror I look like this :eek: Oh well, it will grow back.

I am too tired to catch up now but I did want to send :grouphug: and :wizard: to Denise and Rees. Whatever he needs I hope he gets it and it works. You are in my thoughts and prayers everyday.

Rees did very well with the Upper GI this morning. He got quite upset, but overall handled it extrememly well all things considered.

The Pediatric Surgeon, just called. Rees does have a Diverticula in the lower esophagus. He said it is in a very weird location (usually they are higher in the Esophagus), but isn't sure if that is causing all of Rees' problems. He also said the Fundo wrap looks very large, and it may be twisted or loose. He wants to take a close anatomical look at Rees himself. So next Thursday, May 25, Rees will go to Egleston Hospital to have another Endoscopy and an abdominal ultrasound. The surgeon will perform both tests himself. Rees will have to have general anesthesia again.

The surgeon said the surgery, if Rees needs it, is major and he would be in the hospital for at least a week. He doesn't want to do unless he has to, so we may end up trying the feeding tube route if Rees keeps losing weight.

So please pray we find a definitive answer to what is hurting Rees, that he starts eating, and maintains his current weight. We appreciate the prayers and support more than you can imagine.


You have my prayer, support and anything else that you need from me. I am so sorry that someone so young has to endure such pain. Please send Rees and the other figs my well wishes.

When we found out we were both going to be there at the same time, we checked to see if we'd be in parks at the same time. Our schedules didn't match up except for Cirque du Soleil. We found we were going the same night. So then we checked early or late show. Both late show. Then we checked seating arrangements. As if the meet was meant to be, she & her DH were sitting exactly two seats behind my family in the same row & section.
Never seen Cirque Du Soleil, I was supposed to go one time and got really sick, so I never saw it.

The GI doctor's nurse just called because the Radiologist Report came back. It says the Fundoplication is Incompetent. That means it has failed. He is to call us tomorrow with more information. It also showed that Rees' stomach has rotated to a transverse (lying on its side) position which is very unusual and probably means it is trying to herniate. So, if this is all true, it does look like Rees will be having surgery. I will keep you posted. I told the nurse to have the GI doc call the surgeon so they could discuss treatment. I'll try to be back later.
Sending :grouphug: and :wizard: to Rees and you. If he needs the surgery I hope all goes well and he has a speedy recovery and doesn't need anymre surgery later. :grouphug:

Ok, Marti, Paul, Kitchensink guy and myself all met at WDW last October. We had planned to meet at 6:15 PM by the tiki gods, but ended up being together in line to get in, then we saw each other for a few minutes later that night. I must admit that we didn't really get a chance to talk as it was MNSSHP and we were really busy. I think I met your criteria although I bet that your going to make a new rule that says from this point forward :rolleyes:

Dh took Riley for his eye appointment while I was at the game. He needs glasses, so now I get to take him back to pick out frames. This probably explains some of the headaches he has been having. I had to go to his school today & take him some tylenol. This should be fun seeing how long a pair will last before they get broken or lost :rolleyes: How old do children have to be before they can wear contact lenses?

Hunter started wearing glasses in kindergarten. Knock on Wood he hasn't lost or broken a pair yet. I've made lots of adjustments for him though. They aren't so bad once they get used to them. I think Hunter looks cute in his glasses. I hope Riley adjusts easily.
