Katrina begged for a real, live turtle for 5 years. We never did get it for her. Her best friend got it for her for her 2 Christmas's ago. She got the fish tank from another friend when he outgrew the one that her best friend bought her. I wasn't going to get it for her because I knew she'd be moving on and I'd end up with it. However, Chuck really enjoys it and doesn't mind taking care of it for her.

So Chuck enjoys taking care of the turtle Who'd of thunk it?

The school carnival was tonight and I am so glad it's over!!

I have a conundrum: We have friends that we have known since Abi was in Kindergarten (4th grade now). The last two times we have seen this family I have been worried about the kids (4th grader, 5 YO, 2YO and 9 months). The kids have been unkempt bordering on yucky....in fact there was something in the 5 yo's hair that had me wondering. The 4th grader is sulkier than most 4th graders and has too much responsibility IMO. She is like another mother. I just don't know what to do or say. HELP!!


Then I have a rant: A set of parents let their kid operate a remote tonight (MINE!! even if it hadn't of been I would have said something) while she was eating cotton candy and then looked at me like I had 3 heads because I asked them to stop her.

I was laughing so hard that Chuck asked what was going on. I told him he didn't want to know because it was about him. He came over to read this. He says this is going to cost me!!!! Sounds like on-demand turtle time to me!!! Darn it.

Wash pumpkin. Cut pumpkin into small pieces for easy handling. Remove all seeds, pulp and skin.
Place in large saucepan and cook with enough water to cover pumpkin. Cook until pumpkin is very soft. Check occasionally to see that the water does not dry out. You can always add more water. Stir frequently. Cover to help it cook faster.

Pour into colander to drain excess water. Let stand 1 1/2 hours. When dry, mash well and place in containers. I pack 1 1/2 cups for pie recipe in containers and freeze. Will keep about 9 months frozen with no taste change.


FRESH PUMPKIN PIE:

3/4 c. sugar
1 tsp. cinnamon
1 tsp. ground ginger
1/2 tsp. salt
1 1/2 c. fresh pumpkin
2 lg. eggs, beaten
1 1/2 c. hot milk
Your favorite pie crust

In large bowl, blend sugar, spices and salt. Combine with fresh pumpkin. Add beaten eggs. Mix well. Add hot milk.
Pour into your favorite pie crust. Bake in preheated hot oven at 425 degrees for 15 minutes. Reduce heat to 350 degrees to bake filling about 25 minutes. Filling is set when knife placed in center of pie comes out clean. Makes a very large pumpkin pie. Enjoy!

I can't believe you used "Turtles Rock" as you heading. I started a design and the first thing I typed was Turtles Rock. I then found a couple of pictures but didn't have time to get any further. WTG! Hopefully, you've saved the pumpkin.
