I was in the ER all day Saturday, bad leg pain and severe headache. They rushed me in for an MRI to make sure I didn't have a bleed in my head from the Coumadin I take daily. I have been having a terrible time not being able to keep a therapeutic level & they we worried about more blood clots in my legs and lungs but everything turned out ok.....
Today I was lucky to get an appointment at the Hematologist that specializes in clotting disorders in NYC because someone cancelled, otherwise I had to wait until the middle of September, I go a week from tomorrow.

WFD ~ I blew my diet 100%! Stress eating all the way, french fries & chocolate chip cookies, I hope the 2 Diet Cokes helped balance it out;)

Maria- don't worry about the diet today, after what you went through chocolate chip cookies are therapeutic! I am happy to hear that your Mom is having some relief, even if it is slowly. I do hope the hematologist can correct the imbalance for you , you must have been so scared! :hug:

KAt depending on my day tomorrow I may try to make him a pie. You all have heard about my pie challenges so this may wait until the end of the week. I want to have something good in the house tomorrow......we are a house divided. We are voting on a new library tomorrow and it is expensive. A few of the guys who work with Buddy are very much opposed and have brought flyer's to work. Buddy came home the other night in a tizzy waving his magic flyer well we are three to one...four if you count Kady :thumbsup2 and he keeps sputtering about the taxes and building it cheaper blah blah blah....

I asked him when was the last time he stepped into the library and now he is sputtering but no one can understand him. God help us if this referendum passes by three votes ;) ......and nothing will save him if it loses by one. Shepard's pie, beef stew bean pie and chimichangas are on the menu for a long time. I will add maple syrup and capers to everything :rotfl2::rotfl2:and no salad will be complete without some kind of fruit :rolleyes1

August 18 school starts? Wow, that is really early. No wonder you are doing back to school shopping. I think we start September 2nd.

Buddy only heard the "pie" part of bean pie and was looking for a blueberry pie , he knew I picked blueberries adn raspberries and was ready for real pie. Picture the poor guy when he saw a pie with two of his least favorite things stuffed inside :lmao::lmao::lmao: and no fruit pie in sight!

Liam's team got crushed tonight...I think the score was 11-3, but there were so many blue jerseys crossing the plate, I lost track after a while. However, Liam got his first hit tonight, plus an RBI, so I took him out for ice cream.

Poor Liam :hug: I've had to watch those games and they are so painful. So glad that he got his hit :thumbsup2 Ice Cream and a hit :yay:

I really do not have a recipe, I lost eh original so I have been winging it ever since.

Line a pie plate with a tortilla shell. I needed to use three this evening because I had a deep dish pie plate and small multigrain tortillas.

spread some refried beans, I used 1 can

add a layer of rice, I used brown and season with chopped scallions and parsley or cilantro if you like

Spread some salsa on the rice

layer more refried beans

add salsa

top with shredded cheese I used FF cheddar and soy shreds

I top it with another tortilla, cover with foil and heat at 130 until hot. Remove the foil and crisp the top shell


This is a simple meal but really good. We used it as a side but Marisa and I can have it for dinner with salad.
 
Quick check in to keep y'all updated. :sad1: Alexis' grandmother passed away this morning. Her Mom & Dad are with the family, she's here with me. I told her & she was pretty upset, cried for a while & wanted to go to the hospital. We decided that wasn't a good idea. Boy the questions she's asking are much tougher now, then when she lost her other grandmother. She's worried about her grandfather. Asked who was going to live with her Paw-Paw now & that he was going to be so sad living all alone.

I can't believe that our school starts on the 18! That just seems so very early to me! Last year we started on August 23.

We have some new legislation to prevent schools from starting so early anymore - this year they start Aug 26, if I remember right. It's hard for me to rethink summer, though, since I was so used to summer being June and July - I have an extra month!

I also made a refried bean pie on the side.

Wanted to give an update on my Mom & her 5 herniated discs....she continues with acupuncture appointments and we are seeing some good but very slow positive changes. She is scheduled to see an orthopedist that specializes in spines so we just have to sit tight and take it slow. It will be 5 weeks tomorrow that this all started for her, it feels like it has been months.
Anyone that has been thinking about acupuncture I say go for it!!!! We are lucky that this man is actually an M.D. as well (Oncologist that no longer practices) so he understands Eastern & Western medicine.

I made these asiago stuffed potatos tonight that were really good - from a Gourmet magazine. I made WAY too many, though, like 20 halves. How the heck are we going to eat 20 potatos?! I ate 2 with dinner and was stuffed. I also grilled shrimp and zucchini, plus sliced up the leftover garlic butter sirloin from two nights ago. It was tasty.

Sure. It's easy!

Turkey and Stuffing Bake

3 C. cubed and cooked turkey (I used chicken)
1 bag (14 oz) frozen broccoli florets, thawed and drained
1 can cream of chicken soup
1/2 C. sour cream
1 1/2 C. shredded Swiss Cheese
1 pkg. stuffing mix for turkey
3/4 C. hot water

Place turkey in bottom of an ungreased 13 X 9-inch baking dish. Scatter broccoli florets over the top. In a medium bowl, mix soup, sour cream and cheese. Spread over the broccoli. In another bowl, mix the stuffing mix and hot water. Sprinkle over the top of casserole.

Bake in a 350 degree oven for 30-45 minutes or until hot and bubbly.

You can serve this over rice or mashed potatoes if you want. It's fast, easy and yummy!

Asiago Potatoes

These tender little potatoes, stuffed to the brim with a garlicky, cheesy filling, are an easy alternative to mashed or baked potatoes.

Active time: 20 min Start to finish: 1 1/2 hr

Ingredients
16 small Red Bliss potatoes (about 2 inches in diameter)
12 garlic cloves
1/2 cup olive oil
10 large basil leaves
1/2 lb Asiago cheese, grated
1 cup mayonnaise

Garnish: paprika

Preparation
Generously cover potatoes and 1 tablespoon salt with cold water in a medium pot, then simmer until tender, about 12 minutes. Drain potatoes and rinse with cold water. Cool to room temperature in refrigerator, about 40 minutes.

Meanwhile, cook garlic in oil at a bare simmer in a small heavy saucepan, stirring occasionally, until tender and golden, about 12 minutes.

Drain garlic, reserving oil for another use, then mash to a paste.

Preheat oven to 350°F with rack in middle.

Mince basil, then stir together with garlic paste, cheese, mayonnaise, and salt and pepper to taste.

Using a small melon-ball cutter or a teaspoon, scoop out a hole in each cooled potato, leaving a 1/4-inch shell.

Stuff potatoes with cheese mixture and bake in a pan until cheese is melted and bubbling, about 20 minutes.

My changes - I didn't take the time to do the garlic, I just stuck a big spoonful of minced garlic into the cheese mixture and it was still tasty. I accidently bought shredded Asiago instead of grated so I ran a knife through it a few times and went with it. I also just did 10 red potatoes, some of which were a little larger than 2 inch in diameter, but I just made a bigger hole in those and stuffed them. And I didn't let them cool for a full 40 minutes as I was hungry and they worked fine - just a little hot in my hands!

Any now I have 17 potato halves full of cheese! :laughing:

We had a library referendum around here. Yes we do need a bigger library but not a state of the art library. They were purchasing land and building to the tune of several million. That's million with a capital M Taxes around here are insane already.

It was OK though because I don't like mortadella anyway so I just scraped the melted cheese onto the side of my salad and gave John all of the meat.

Has anyone heard from Lindsay lately? I don't think she has been posting.

I'll tell Buddy he has friends willing to feed him :lmao:For all of his teasing he was so happy last night. Marisa is down just shy of 40 pounds :yay::yay::yay::yay:and he is thrilled for her. He would eat sawdust if it meant that the girls are healthy, and has told me that some of the grains do taste something like that :rotfl:.

Our library is scheduled to cost 14 to 15 million dollars, that is why there has been so much discussion. Our taxes are high and people are very vocal about this. In the parade one guy followed with his dump truck decorated with a giant "NO" sign which I found awkward. There are signs all over and it is a subject that is very touchy. Last night Marisa left a "friends of the library" pamphlet near the coffeemaker....assuming that Buddy would read before coffee :rotfl::rotfl::rotfl:

Dinner is going to be something with chicken. The girls are scrapping after work so I want something that will be heat and eat and not much mess.

Hi, everyone. I am alive. Things have just been nutty lately. With all the crap going on with my dad and stepmother's divorce, and some annoyances with my MIL (long, petty story, if you want to hear it). I'm just physically worn out and tired.

Scott and I are going with my cousins to Atlanta this Saturday for his birthday. I'm hoping getting away for a day will help me. I just need some time away from everything.

I am seriously counting down until we go to Disney World. We will be gone Jan. 11-17, no parks, just relaxing. I need it so bad.
