WFD ~ Turkey and Stuffing Bake (for DH)
I have to make a few changes so I don't have to go to the store.

It will be chicken & cheddar cheese.

Update on all the mint growing like weeds.....I cleaned & chopped it last night and put it into ice cube trays....
We will have ice tea tonight using some of the ice cubes.

I also did the same with some of my basil, took it out of the trays this morning and popped the cubes into a double ziplock bag so I can use them in the fall.
 
Now here's something way off topic--but this is why I didn't cook all weekend. Decided to channel my inner Martha Stewart and get creative with DD's bedroom

I am seriously counting down until we go to Disney World. We will be gone Jan. 11-17, no parks, just relaxing. I need it so bad.

Our Nov trip is similar - very few park time, lots of relaxing time. :woohoo: Glad you're okay but sorry life is crazy right now.


I'm making Easy Indian Butter Chicken tonight - though I forgot to thaw the chicken this morning :sad2: I'll either pick up a pound at the store or cook it frozen and hope it works. It's a highly rated recipe at All Recipes and it sounds tasty. We'll see!
 
I made these asiago stuffed potatos tonight that were really good - from a Gourmet magazine. I made WAY too many, though, like 20 halves. How the heck are we going to eat 20 potatos?!

You can freeze them. Beck and I make twice-baked potatoes, and they freeze very nicely. I am sure yours will too. They sound too good to toss!

My mom gave me a piece of the eggplant dish that Beck was talking about (and forgot to post the recipe for...:rolleyes1 ) so I am having that. I'm not sure what else I am making.

Aimee, you can definitely freeze those potatoes. I made them the month the magazine came out. I did not use the small potatoes, instead I baked it into smaller sized russet potatoes. They were delicious, but very rich as you know! I searched my flickr but I guess I did not save a picture of them. Anyway, I did freeze the leftovers and they were just fine.

For dinner tonight I am making a big salad, with lots of different vegetables. I'll put some of the leftover flank steak on John's. I'm making corn on the cob too.
 

Baked Eggplant Rollatini

1 large eggplant, about 1 lb., cut into 1/4" thick lengthwise slices
handful of fresh basil, sliced into ribbons
1 egg, beaten
1 cup ricotta cheese
1/2 cup parmesean cheese
1/4 cup boursin cheese
1/4 cup pine nuts, lightly toasted
1 tbsp. fresh oregano

tomato sauce (just use your favorite recipe--there was a recipe for sauce in the book but there was nothing unique about it)

Combine the basil, egg, ricotta, parmesean, boursin, pine nuts, and oregano in a bowl.

Cook the eggplant slices on a grill pan (or on your grill) until tender, turning once, about 12 minutes total.

Spread the eggplant with an even layer of the cheese, distributing equally among the slices. Roll the slices up and place in a baking pan. Top with tomato sauce. Bake at 350 degrees for 20 minutes, or until bubbly. Garnish with extra basil and serve.

Can anyone help me? I need tandoori masala for the recipe I was going to make tonight and I can't find it anywhere! I thought for sure our Super Target would have it, since they carry a wide variety of ethnic foods and spices, but it was a bust. We don't really have a big Indian population, I am not sure we even have an Indian grocery though I'll google to see.

Is there another substitution for this I could use?

So once again I try to coax the cat inside to get out of the rain, but he won't budge. He won't let you pet him, so there's no picking him up. Each time I walk by the door, which is in the middle of my living room, that is what I see! He won't come in, but he makes me feel awful when he just sits there and stares in at me!!!!!!!!!!!
 
Hi, everyone. I am alive. Things have just been nutty lately. With all the crap going on with my dad and stepmother's divorce, and some annoyances with my MIL (long, petty story, if you want to hear it). I'm just physically worn out and tired.

Scott and I are going with my cousins to Atlanta this Saturday for his birthday. I'm hoping getting away for a day will help me. I just need some time away from everything.

Wish I could help you. I'm in kind of the same boat. I'd love to make some of the Indian dishes posted here, but just can't find the ingredients.
 
Another hot day here today! For dinner we are having a chicken salad. I'm serving it with cantaloupe slices and some avocado. I love chicken salad!!!

I took the kids to the mall for lunch today (gotta love the Chick fil A), and then we browsed in Build A Bear Workshop for a while. They all have stuff they think their bears "need", so now they have something to work for! We did decide that on Friday, after we find out the sex of the baby, we'll go make a bear for Peanut to set in the crib. They were all excited about that!
 
Aimee I found this one Tandoori Rub


1 tablespoon ginger powder
1 tablespoon cumin
1 tablespoon coriander
1 tablespoon paprika
1 tablespoon turmeric
1 tablespoon salt
1 tablespoon cayenne


Mix all ingredients together. Store in an airtight container.

I think you would be able to substitute curry powder.
I did also find a recipe for the actual blend but I'm going to bet you won't have mango or mint powder in your spice cabinet. Do you have a penzy's, World market or Trader Joe they all would have that blend too
 
Neat Loaf (It's good)

2 lbs ground beef (get the good stuff)
2 large eggs
3/4 tsp sea salt
1/2 tsp cayenne pepper
1/2 large golden onion chopped
1 cup seasoned bread crumbs
1 cup condensed vegetable soup
1 tbsp worcestershire sauce
1/2 lb Swiss cheese chop it up into small chunks

Preheat the oven to 350 degrees.
Mix everything by hand. Be sure to take off your wedding ring. Chances are it's filthy. Put it all in an ungreased loaf pan. Trust me. There will be plenty of grease. Let it cook for about 1.25 to 1.5 hours. You can use a meat thermometer and make sure it's at around 160 degrees or you can be manly and just eyeball it. When it looks real good it's pretty much done.

Topping
1/2 cup brown sugar
1/4 tsp salt
1/4 cup ketchup
1 tbsp worcestershire sauce

Mix it up and put it in the fridge until you have about 5 minutes left to cook. Dump it on top of the delicious looking meatloaf then let the meatloaf finish cooking.

It will serve about 4 to six depending on appetite but don't expect leftovers. If you want leftovers don't invite people over. Everybody will want seconds even your sister with the eating disorder. She'll be cured. It's that good. I highly recommend this recipe for people who don't like meatloaf.

It is a cat's job to make people feel guilty. My dad's cat used to love to stare at you until you gave up some of your sandwich. She was horrible if you were eating an Italian beef she would steal pieces right of the counter.:rotfl:
 
So much stuff to get caught up on!

Went to my sisters this weekend and then on a field trip to the zoo with a group of kids yesterday. I got home last night, ate dinner and passed out, I slept 11 hours last night.

I also went to the zoo with my DN early Saturday morning. I was doing a scavenger hunt for yesterday and needed to get the information for it and decided to take her down there. To beat the heat we went really early Saturday morning. We got up with my sis and older neice when they were getting ready to go to swim meet at 5:15am. She was so funny, she was coming out of the bathroom and told me "come on, it's time to get ready to go to the zoo", when I told her I was going to get dressed she said "alright, I'll wait in my bed for you to come give me some clothes to wear". She's 4.

The pressure got to DH and he could not resist to make our whole trip the Poly for a week.

I will! It really knocked me out. I'm hoping it was just a combination of whatever bug Leslie had, plus the heat (today was the hottest day of the year so far). Since I'm now "heating for 2" as Alan says, it really got to me. Doesn't help that Costco was very hot as well!

Goodness. :hug: I was going to suggest dehydration myself, that's what is sounded like. As I told the kids we took on the field trip to the zoo yesterday, drink water, lots and lots of water. I said it so many times they started looking at me like I had lost my mind. :rotfl:

I don't know about freezing it, although you can freeze basil. I would dry it and then put it in airtight containers. I am one of those slugs who does not keep the herbs. Iuse them and the wait until the next year :sad2:

Alexis' grandmother passed away this morning. Her Mom & Dad are with the family, she's here with me.

I was in the ER all day Saturday, bad leg pain and severe headache. They rushed me in for an MRI to make sure I didn't have a bleed in my head from the Coumadin I take daily. I have been having a terrible time not being able to keep a therapeutic level & they we worried about more blood clots in my legs and lungs but everything turned out ok.....
Today I was lucky to get an appointment at the Hematologist that specializes in clotting disorders in NYC because someone cancelled, otherwise I had to wait until the middle of September, I go a week from tomorrow.

WFD ~ I blew my diet 100%! Stress eating all the way, french fries & chocolate chip cookies, I hope the 2 Diet Cokes helped balance it out;)

Whole Foods typically carries most weird things. You can also find them at Cost Plus World Market. You can find Whole Foods in most states except most of the more rural ones. I hate shopping there because it's expensive and everybody seems a little stuck up. No offense if you shop there. The selection is really good.
