The All-New What's For Dinner Thread!!(recipe index in OP)

Wendie - Prayers for your dear friend Becky, that she find peace soon.

Sounds logical, hope that's all it is.

:scared1: I've never had a root canal, is it as bad as I have heard it is?

Your old people date night sounds like a great time to me, what does that tell ya?:rotfl2: Love those lettuce wraps.....

This evening we have to attend a sports award function at Kyle's school and will probably be going out to dinner after with some of the other parents.

I've had 2 root canals and they were not bad. The worse part is keeping your mouth open and not talking :rotfl: I have and really good endodontist who is really good with the anesthestic, your numb for hours later. :thumbsup2 I never had to have more than 1 tylenol after.

I agree the old people date sound pretty darn good to me.:rotfl2: Back home and in bed by 11:00.

I forgot I wanted to remind everyone, I think this tuesday is free scoop day at Ben and Jerry's. We have so many local ice cream shops, this is the only time we go there, but it's always a fun time.

Yum. We don't have a Ben and Jerry's close to us or I would find my way there on Thursday. We do have a Marble Slab and that is yummy. As a matter of fact, the Marble Slab closest to my office is owned by a client. One time I did a favor for him and when he came in to sign the papers, he came with several containers full of various flavors and mixes as a thank you. Let me tell you, those didn't last long.

The root canal wasn't really all that bad. I think the horror stories about the root canals go back to the days when you had to have them done over a week's time. This was just a little worse than a filling. I was really just telling you the story to prod you back to the dentist if your fillling is still bothering you on Monday. Sort of one of those "don't end up like me" examples. KWIM?

I love the lettuce wraps too and I have been craving them. This Chang's just opened up about a month ago and this will be our first visit. We didn't have one close to us before and I haven't been since my last trip to Atlanta.

As for Kyle's awards banquet, every time you mention one I think about Forrest Gump. You know, the part where he said "So I went to the White House. Again. And met the President. Again. And got a medal. Again." Except I think so I went to the awards banquet. Again. And was awarded MVP. Again. And got a trophy. Again. :goodvibes Seriously, I hope you have a great time.

Hailey's doing great BTW. She has learned to buckle her own seat belt by herself and will do it without us prompting her to. Which makes her smarter than the other two according to Kenny since they still forget. We are anxiously waiting for the pool to open since she loves to swim and it's still too cool to go out on the jet ski.

She's having a tough weekend though. The ball she sits on ALL the time and bounces on burst on Monday night. I ordered a replacement from the therapy catalog and on Thursday it still had not shipped. Thursday morning I called the company and asked them to ship it Next Day Air. Well, yesterday afternoon I tracked it and UPS didn't manage to get it from Ohio. I called the customer service (if you can call it that) and spoke with the very unhelpful person on the other line who told me it was still in Ohio and wouldn't be delivered until Monday. When I asked about Saturday delivery, she said I had to pay for that service to get Saturday delivery. I went nuts and told her I had paid for next day air and that today (Friday) was the next day and that technically Saturday would have been 2nd day. She was unhelpful and unapologetic. I told her this is why my company ships FedEx and why I turn down the UPS rep who stands in my office once a year asking us to switch. Sorry for the rant but it makes me furious to see my child frustrated, looking for her ball and not understanding why she doesn't have one.

OMG! You poor thing with that dental experience!

Have a great time tonight! My mac salad is very easy but very good. I will post later today.

Your cake sounds good. I cannot bake or else I would ask for the recipe! ;)

I had a really bad experience getting veneers years ago...the temporaries were really ugly, fell off and hurt like a SOB, then I got the veneers and they were not to my liking and then they did not bond them right and I wound up getting a piece of pork chop stuck between my real tooth and the porcelain!!! :scared1: Not a memorable experience but I have to get them redone soon so I guess I'll be going through all that again...

Thanks. I would appreciate the recipe. Especially if it is easy! :goodvibes

The cake is good and easy too because I don't bake either. It actually starts with a mix, which surprised me because of the taste.

I think you win the dental horror stories. Mine was more funny than bad. That poor dentist kept telling me over and over he did not want to deliver my baby in his office. He said when his child was born he wouldn't even cut the cord. :rotfl: He must have asked me a million times if I was ok. If I had the veneer experience you went through I don't know if I would want to go through it all again either.

OUCH! That sounds painful!!!

Hailey amazes me, she is so smart.:goodvibes That's a shame about her ball, doesn't it just infuriate you when people that are in "customer service" positions have that attitude, it really gets my blood boiling. I can only imagine your frustration.

Thanks for letting me vent. Hailey really does amaze us sometimes too. We knew she had figured out how to pull a chair to the fridge to reach the suckers on top, but she would always leave the chair against the fridge, so we would know she had been up there. Well, she has now figured out to hide the evidence.

I hide Milk Duds. I have to or she would eat an entire box and not eat lunch or dinner. So I have put them in the pantry behind the brown and powered sugar boxes (on a high shelf). Well, apparently, she saw someone getting them from there and has now figured out they were there. So not only did she find the Milk Duds, she pulled the chair over, got them, pulled the chair back so we wouldn't know and hid the Milk Dud box behind her TV so we wouldn't see them. She also would wait to eat them until I was occupied in the kitchen fixing dinner, etc so I wouldn't see her with the box. She ate three boxes in as many days before dumb Mom figured it out. :lmao: So she's smarter than me at least.

Kat, Have fun tonight...I am sure you'll have tissues handy! ;)

Gretchen, Hugs for Hailey!

Love the Forest Gump lines!

Hello ladies (and I believe I saw a Gent or to as well?)... I'm a long time lurker, but have enjoyed keeping up with your recipes!

Today, I threw a pot roast into a Pampered Chef Covered Dutch Oven with onion soup mix, some beef boullion (about 1 cup), carrots and onions. I seasoned and seared the roast first and am slow roasting it at 250 degrees for about 4.5 hours.

For lunch, I just made the most yummy grilled cheese! I mixed american and provolone for the best flavor ever! YUM! Now... I just need to make it without the american cheese and it would probably be to die for! Anyone make their grilled cheeses with something other than american? :confused3

Welcome! Welcome! No more lurking for you!

The sandwich sounds great but I don't ever make them even though I love them. And yours sounds divine. I don't know about everyone else, but I don't think Nancy is allowed to make anything other than tuna sandwiches in her house. ;)

(I hope you've been lurking long enough to know I'm teasing with you and I'm just like that). Welcome again.

I'm prepared, kleenex is in purse already.;)

Hello ladies (and I believe I saw a Gent or to as well?)... I'm a long time lurker, but have enjoyed keeping up with your recipes!

Welcome! I look forward to sharing recipes with you.:goodvibes

Hello! I have spent the last 4 hours working in the yard. I hate gardening - hate it! Worse than baking.

But our flowerbeds look good.

Did I mention that last week when we were getting that bad weather, there was a tornado 2 miles from our house? Destroyed 3 houses completely! No sirens, nothing. We were sitting here watching a movie like nothing severe was going on. DUH!

We have a couple's bridal shower to attend tonight about 1.5 hours away. Then we HOPE to see my BFF and her two baby girl's after that. I'm exhausted and don't want to get dressed much less go make nice with a bunch of strangers but what can you do.

We think the shower is a BBQ thing since it's at 530. If not, we'll get something out later.

Hey Y'all,

Back from the fair & it is pouring outside. All the goofy parents & grandparents stood out in the rain to watch their little ones sing! But Alexis was quite animated & looked so cute. Then we huddled under a tarp, when it would slack off, we'd hurry to a food booth. Finally gave up & came home.

Nancy, I did manage to gobble down a few things for you! Funnel cake, catfish with shrimp etouffe on top & an Eggplant Pirougue. That's fried eggplant with fried oysters topped with a creamy shrimp sauce! Definitely lowland cooking for ya! ;)

Have to go jump in the shower now, we both were soaked!

I think we'll probably have a salad for dinner. We did eat way too much!:rolleyes1

We went to Outback tonight. It was so nice to go out to eat as a family!
We had a bloomin onion, DH had shrimp & scallop alfredo pasta, I had Tuscan ribeye with olive tapenade, asparagus, and mashed...Luke would only eat a couple of fries:confused3 my DS is the world's worst eater!
DH drank beer, and I had a bloody mary (with a weird pickled stringbean in it!)

Ann

Welcome Stinkerbell! I make plain ol grilled cheese but I learned on the boards to spread the bread with mayo instead of butter before grilling...it sounded wierd but I tried it. We really like it that way! Nothing like grilled cheese dunked in tomato soup! Ahhhh! Comfort!

Sheryl, thats dang good sounding fair food or as you called it low country! ;) Yum!

Here is my macaroni salad recipe:

1 1/2 # box of elbow macaroni
1/2 bunch of green onions, chopped (I have substituted red onion for these and it was great...about 1/3 cup finely chopped)
red, yellow and green peppers, equivalent to 2 peppers, chopped fine
2 generous tsp of dijon mustard
1 1/2 cup mayo
celery salt
salt, pepper, celery seed to taste

Cook macaroni in salted water, drain.

While noodles are still hot, mix in mustard and mayo in a large bowl.

Mixture should be wet but not creamy. Mix in onions, peppers, salt, pepper and about a 1/2 tsp of celery seed.

Sprinkle celery salt over the top of salad, mix.

Taste to see if more spices and mayo are needed.

Chill for at least 3 hours prior to serving.

I've been having a toothache all day. It's funny though, it's a tooth that I just got a filling in about three weeks ago....anyone ever had a filling go wrong?

Like Janice said, it probably needs adjusting. I had a problem with my last filling, but they filed it down a bit, and ever since, it has been fine.

Wendie -- to you. I hope your friend finds peace soon.

Gretchen -- Your "Old Person Date" sounds about the right speed for me. It sounds like Hailey amazes you all the time. I love that about being a parent...I really never know what I am going to get (keeping with the Forrest Gump theme).

Welcome Stinkerbelle2007!

Dinner tonight was pan-seared sole and scallops served with a tomato-basil cream sauce, risotto cakes, and sugar snap peas. The photo isn't great, but here it is:

Morning all!

Sorry I didn't post yesterday. Me and Scott got up at the crack of dawn and went to IHOP for breakfast and I actually never got to DIS at all yesterday. He and BIL went for a bike ride and I went and worked out. When everyone was home, I made shredded BBQ chicken sandwiches for us. Recipe below.

Have a great day all!!

Shredded BBQ Chicken Sandwiches (my changes in bold)

1 cup chicken stock
1 bottle Mexican beer Didn't use beer, just used chicken stock
4 pieces, 6 ounces each boneless, skinless chicken breast Can't get packs of 4 breasts around here, only 3, and it was enough
2 tablespoons extra-virgin olive oil, 2 turns of the pan
2 cloves garlic, chopped I love garlic and used about for grated cloves- add as much as you like!
1 medium onion, peeled and finely chopped
2 tablespoons Worcestershire sauce, eyeball it
1 tablespoon hot sauce (recommended: Tabasco) I misread the recipe and thought it said 2 tbs. It was yummy!!!!!! Whoo boy!
2 tablespoons grill seasoning blend (recommended: Montreal Steak Seasoning, by McCormick)
3 tablespoons dark brown sugar
4 tablespoons tomato paste
1 large sour deli pickle, chopped I hate pickles so I omitted these and the ones below
6 to 8 slices sweet bread and butter pickles, chopped
6 soft sammy buns, such as soft burger rolls, split

Bring liquids to a simmer in a small to medium skillet and slide in the chicken breast meat. Gently poach the chicken 10 minutes, turning once about after 5 minutes.

While chicken poaches, heat a second medium skillet over medium low heat. To hot skillet, add extra-virgin olive oil and garlic and onion and gently saute until chicken is ready to come out of poaching liquids. Combine the next 5 ingredients in a medium bowl and reserve.

When the chicken has cooked through, add 2 ladles of the cooking liquid to the bowl, combining with the sauces, spices, brown sugar and tomato paste. Once the liquids and seasonings are combined, remove chicken, slice it, and transfer to the medium bowl. Using 2 forks, shred the chicken and combine with the liquids. Add the shredded chicken to the onions and garlic and combine well. Simmer together 5 to 10 minutes, using extra cooking liquids to make your chicken as saucy as you like.

Combine sour and sweet pickles in a small bowl. Split rolls and fill with scoops of shredded chicken. Top with pickle relish and serve.

Good Morning!

Kat, Can't wait to hear about your evening. :)

Laura, Dinner looks great!

A's team beat one of the best teams in the league with only 8 kids!!! :cool1: We were thinking we were going to have to forfeit due to not having enough players but a recently hurt boy (healing sprained ankle) showed up and played. What a trooper. Andrew played 2nd and did great.

We are going our for a while early in the day and then coming home to paint. We cannot work outside since its raining. I have a big hole in the back yard...the drain is taking longer than Tom expected.

I have a chicken out. I will marinate it before we go and may do can chicken...don't know what I'll put it the can!!!

Have a great day all!

When we first moved here Alex had a friend around the street. The doctors told her parents she would never count past 5. Well she counted 1,2,3,4,6,7,8,9,10,etc up to 50. Never count out any child they will surprise you ever time:hug: I hope you get Hailey's ball soon. I would call on Monday and talk a supervisor and get your "next air" refunded I could have picked it up of your and delivered in less time.:sad2:

Try Guyere, Bacon and tomato. ;)

I like how they sneak veggies in just about anything.

I think we are having grilled hamburgers. I not sure on the sides yet.

Lauren Your Mac salad sounds like I would like that one.

I agree the old people date sound pretty darn good to me.:rotfl2: Back home and in bed by 11:00.

I missed this part of your post yesterday, but you're right, that is exactly what we liked so much about it. We have found out the later movies don't work so well for us. We are likely to fall asleep. :rotfl:

I'm prepared, kleenex is in purse already.;)

How did it go last night?

How could you not?!? Especially with a menu like that. Yummmmm.

Here is my macaroni salad recipe:

1/2 bunch of green onions, chopped (I have substituted red onion for these and it was great...about 1/3 cup finely chopped)
red, yellow and green peppers, equivalent to 2 peppers, chopped fine

Taste to see if more spices and mayo are needed.

Chill for at least 3 hours prior to serving.

This looks great, thanks. I may try it next weekend if I can convince Kenny to grill for us. And if it quits raining. Still no roof for me. It didn't rain yesterday, but we are expecting storms today. (sigh)

Congrats to A on the big win yesterday. But honestly, which of the three of you was the most excited? I'm betting on Tom.

:rotfl: :rotfl: That is the truth when it comes to all children, I think.

Thanks for sharing that story. I agree wholeheartedly. She has come much farther already than any of the "experts" thought she would. And thanks for the advice on the refund of my next day air charges. I think I am going to do that, but I wanted to wait until I received it. I was afraid that if I was too pushy, my delivery might get "accidentally" lost or delayed. I have learned my lesson however. I ordered an extra ball this time so I will have a backup.

Our date night was a lot of fun yesterday. We ran to the wholesale club and bought the mini cinnamon rolls Hailey (and Kenny) loves and ran to the movie. We saw Forgetting Sarah Marshall which was really funny, if a little raunchy. Then we shopped for a while before time for dinner and I found something I have been looking for forever - denim shorts that pull on (no buttons or zipper) for Hailey. They had 2 pair in Justice that were just precious and Hailey really liked them when I brought them home last night.

Dinner was at PF Chang's and was wonderful. We had the lettuce wraps and shrimp dumplings for appetizers and both thought the wraps were the best thing we had all night. For dinner we ordered the Kung Pao scallops and honey shrimp. The Kung Pao was good, but boy, was it loaded with sodium. Like burn your tongue it was so salty. I thought this dish was supposed to be more hot than salty. So I didn't eat too much since my blood pressure couldn't handle it.

Anyway, we had a great time and swore we were going to try and do it more often.

Tonight I haven't decided on dinner. Some kind of pork since I have a pork tenderloin in the fridge.

WDF- DH has requested fried fish. I have to go to the store later so it depends what looks good. I just made some bean salad and later I plan on making Lindsey's Hot and Cold Sesame Noodles.

Lindsey's Hot and Cold Sesame Noodles

1/2 pound spaghetti
1/4 cup Tamari dark soy, eyeball it
1/4 rounded cup smooth peanut butter, softened in microwave 15 seconds on high
2 tablespoons cider or rice wine vinegar
1 tablespoon dark sesame oil, eyeball it
2 tablespoons hot sauce
2 cups shredded cabbage and carrot mix, available in produce department
1 cup bean sprouts or pea shoots, any variety, available in produce department
3 scallions, chopped on an angle
2 tablespoons sesame seeds

Cook pasta to al dente, with a bite to it, then cold shock it to stop the cooking process by running it under cold water in colander. Drain the pasta very well. In the bottom of a large bowl, whisk together soy, peanut butter, vinegar, oil, sesame oil, and hot sauce. Add noodles and veggies and toss to combine the noodles and coat them evenly with sauce. Sprinkle scallions and sesame seeds throughout the salad and serve.

Bean Salad
Corn Relish
Cider Vinegar
Salt & Pepper
1 can Wax Beans
1 can Green Beans
1 can Butter beans or Chix Peas
Diced Onion
Celery
Diced Green Pepper

I usually add by taste no exact measurements, sorry. Taste great the longer it sits.

Ann

Lauren Your Mac salad sounds like I would like that one.

Its basic but very tasty. I am not great at making salads so this, glynis potato salad, the potato salad recipe on the back of the mayo jar and broccoli salad are pretty much what I can do good.

I think this mac salad would be good with tiny shrimp too. :thumbsup2

This looks great, thanks.

Congrats to A on the big win yesterday. But honestly, which of the three of you was the most excited? I'm betting on Tom.

Our date night was a lot of fun yesterday.

Tonight I haven't decided on dinner. Some kind of pork since I have a pork tenderloin in the fridge.

Your welcome! Thanks for the congrats. Tom was really proud of A...but unfortunately he missed this game. He was home digging! He is very proud of A though, he tears up at times just talking about how proud he is. :)

I am glad you had fun yesterday. That movie looks hysterical!

Have you tried Kathy's Cajun Pork Roast? This is our fav!!!

I decided to make sticky chicken in the crock pot. I will serve stove top, sweet potatoes and some sort of veggie that I have on hand.

Have a great day!

I decided to make sticky chicken in the crock pot. I will serve stove top, sweet potatoes and some sort of veggie that I have on hand.

Have a great day!

I got a crockpot for Christmas from DM. I must admit I hate cooking with it.
Anything I have made I have not loved. The only thing I like using it for is bring meatballs or keilbasa to buffets.

Lauren, is this sticky chicken recipe posted? I hate to give up on my crockpot so easily...I feel defeated.

TIA,
Ann
