OK, so I know that Liberty Tree is the "Go-To" for a traditional holiday style meal--but what are some other locales that may do something similar? Will be there the week before Christmas.

Sounds like you are looking for a traditional holiday meal?
If so, any of the restaurants with names that don’t highlight a cuisine will probably make you happy: Grand Floridian Cafe, Narccossee, Garden Grill, the new steak eatery at the Contemporary, etc. You can check www.allears.net and see past holiday menus that will give you ideas of where to go for your trip.

We have gone to 50s Prime Time for thanksgiving dinner multiple times and they have a traditional turkey dinner as their blue plate special.

We couldn't get Thanksgiving reservations at Liberty Tree so we had a delicious dinner at Steakhouse 71.
