Thanksgiving WW Recipes

I thought that this is a good place for all of us to share our best WW (or whatever diet your on :goodvibes ) recipes. I am going to 2 dinners on Thanksgiving, and I plan on bringing something to at least one of them that I can eat! Here are a few of my appetizer recipes that I'm thinking of making:


Reubin:

6 slice rye bread, cut into quarters, or 24 mini party breads
1 serving cooking spray (5 one-second sprays per serving), or enough to coat bread
1/4 cup diet thousand island salad dressing
8 oz low-fat hard cheese, Swiss, cut into 24 pieces
1/4 pound cooked corned beef brisket, lean, cut into 24 pieces
1 cup sauerkraut, drained


Preheat oven to 350ºF. Coat a baking sheet with cooking spray. Place rye bread on baking sheet; coat each piece with cooking spray.

Spread 1/2 teaspoon Thousand Island dressing on each piece of bread. Layer with 1 piece each, Swiss cheese and corned beef, and 2 teaspoons sauerkraut.

Bake for 15 minutes. Serve immediately. Yields one reuben bite per serving


Basil Cheese Triangles

1 Feta cheese
2 eggs - slightly beaten
1/4 cup basil leaves - finely chopped
1/4 teaspoon white pepper
16 ounces phyllo dough - thawed
1/3 cup butter

Heat oven to 400 F. Grease cookie sheet. Crumble Feta cheese into small bowl; mash with fork. Stir in eggs, basil, and white pepper until well mixed. Cut stack of phyllo sheets lengthwise into 2-inch strips. Cover with plastic wrap, then with damp towel to prevent them from drying out.

Place 1 level teaspoon cheese mixture on end of 1 strip; fold phyllo strip end over end, in triangular shape, to opposite end. Place on cookie sheet. Repeat with remaining strips and cheese mixture. Brush butter over triangles.

Bake 12 to 15 minutes or until puffed and golden. Serve warm.

Makes 6 dozen (72) .

Per serving: 52 Calories (kcal); 3g Total Fat; (75% calories from fat); 2g Protein; trace Carbohydrate; 13mg Cholesterol; 74mg Sodium

Hot Wings

3 T. Louisiana-style hot sauce
1/2 tsp. paprika
1/4 tsp. ground red pepper
1 lb. chicken tenders
1/2 c. blue cheese dressing
1/4 c. reduced-fat sour cream
2 T. crumbled blue cheese
1 medium red bell pepper, cut into 1/2-in slices



Preheat oven to 375-F. Combine the first 3 ingredients in a small bowl; brush on all surfaces of chicken. Place chicken in a 11-in. x 7-in baking pan sprayed with nonstick cooking spray. Cover and marinate in refrigerator for 30 minutes.

Bake, uncovered, about 15 minutes or until chicken is no longer pink in center.

Combine next 3 ingredients in small serving bowl. Garnish as desired. Serve with chicken and bell pepper.

:: these are spicy but not hot, if you want hotter add more hot sauce and pepper


One serving equals: 83 calories (27% from fat)...2 gm fat (1 gm saturated)...9 gm protein....5 gm carbohydrate....27 mg cholesterol....180 mg sodium....0 gm fiber



Thai Hot Wings

1/4 cup soy sauce
1/4 cup honey
2 tbsp. red curry paste (in the Asian foods
section)
1 tsp. ground ginger
1 tsp. cumin
20 Chicken Wings


Preheat oven to 350°F.
In a small bowl, stir together soy sauce, honey, red curry paste, ginger and cumin. Rinse chicken wings, pat dry and place on a baking sheet. Bake for 20 minutes, remove from oven and brush with half of the sauce. Return to oven and bake for 5 minutes. Baste with remaining sauce and bake for 5 minutes more

Great idea for a thread.... hope it is not too late for some folks!

For a dessert, I highly recommend the angel food cake/pineapple that is a WW staple.

Mix an angel food cake mix with a can of crushed pineapple in a LARGE bowl (the mix expands quickly). Put in your baking dish of choice after spraying with Pam. (Bundt type pan is pretty... also works in a tube pan or 9 x 13 pan.) Cook according to box directions (until browned and slightly crispy on top). I have also made it into cupcakes in the past.

Here is the part I don't remember clearly, so you may want to check somewhere. I believe it makes 12 servings and each serving is 1 point. But I haven't made this in MONTHS so my memory is probably questionable!

This is yummy as is and really good with fat-free Cool Whip (if you don't mind that stuff... some people don't like it). HTH.........................P

can we change it to "christmas" recipes?? i have a couple from Cooking Light, i don't have time to type them in now but i will this weekend!
