Thanksgiving Stuffing (and as of 2017 Homemade Desserts)

This is the most sought after food on the table at my family's Thanksgiving. Even more than the turkey. My mom makes a stuffing out of potatoes, sausage, bacon, onions and Bell seasoning. It is great. Especially if you can get some of the crust that sticks out of the bird.

As a kid, I would only eat Stove Top. Then that option was taken away from me, so I refused to eat mom's stuffing out of spite. Then one year, I caved. And ever since then, when the table is being set, I ALWAYS make sure the bowl with the stuffing is closest to my seat.

Do you have a special kind of stuffing or side dish for Turkey Day?

Edited To Add: After 4 yrs, there have been some awesome ideas to try with the different stuffings (or dressings). So, let's keep it going and add to it. How about a homemade dessert that you bring to the table that gets raves. I'll be adding mine last post as of today. Hope to see you all bring the sweetness.

My stuffing is sausage, poultry seasoning, cubed bread, butter, onion, celery, chicken broth and diced granny smith apples. I pretty much hate any other kind of stuffing :)

that is mine minus the apples. My sister makes a killer Cuban all meat stuffing.

I guess I never thought about making my own since it is all I have ever had. BUT I love stuffing.
 
Oh yea, we love the stuffing or dressing depending on which part of the country you are from.

I make "Grandma's Sausage Stuffing", which has been modified over the yrs.

Secret ingredient is the homemade turkey broth. The better the broth, the more delicious the stuffing. I buy extra parts to make the broth. The broth is so good. We use it for the homemade turkey gravy as well. YUM...The gravy itself becomes a food group all on it's own.

My ingredients are pretty basic for stuffing.

Celery & onion, sauteed in a stick of butter.

Add, Pepperidge Farm herb stuffed, sage sausage already browned/drained, dash of sage & poutry seasoning, add an scrambled egg if you wish, then add hot broth till it is not too dry and not too wet.

Obviously if you are stuffing the turkey with it then more on the drier side set aside.

The rest gets a little more moisture to the correct consistency and then placed in foil, refridgerated, and sealed for baking later.

We don't do stuffing for our Thanksgiving; we do dressing (not in the bird). I LOVE my momma's dressing, too. No my husband's family's dressing? Not so much. His grandparents make this oyster dressing that is... well, not good. So, a few years back, I hosted my husband's immediate family for Thanksgiving and I made my momma's dressing. We use cornbread, chicken broth, sage, poultry seasoning, onions, and a few other things. It is delicious. Now, my sister-in-law begs me to make my stuff instead of their grandfather's when we go there for Thanksgiving. Won't be doing that, though.
 
mine is the one my mom always made; breadcrumbs, apples, raisins, onions, celery, seasoning. so good, although as a kid I hated any kind of dressing/stuffing.

I only do corn bread dressing. It is my moms recipe pretty much the same as JennaDeeDooDah's recipe, and I never do anything else. I can't stand any type of dressing with fruit in it, I don't like fruit in my food and I don't like it cooked.
 
Yes, I make a simple home-made dressing.... like my Mom made... A dressing that has cornbread in it, Similar to Cracker Barrel, but SO much better.

Fresh cornbread, baked in a cast iron skillet, diced up.
Bread crumbs. Just zap one slice of bread at a time in the blender.
Celery and Onions, chopped. Not too chunky and not too fine.
Turkey broth.
Salt to taste.
Poultry Seasoning. (SPICE ISLAND)

here is the thing...
I haven't found anything yet that compares to SPICE ISLAND POULTRY SEASONING!!! Not even Bell, or any other. Especially McCormick. OMG... that one is awful... just mostly black pepper.

I cook the celery and onions in a pot with the turkey broth. No need to fry in butter... the veggies come out tender and delicious. Less work.
Season this 'soup'.
Pour this over the diced cornbread and breadcrumbs in a large bowl, until VERY most... as long as liquid isn't dripping out of it, then it isn't too wet. Don't want dry dressing. Just lightly fold together... you don't want 'mush', or 'batter'.

Dump into baking dish, and bake in a HOT oven. This is mostly to brown this and firm it up. Shouldn't take too awfully long. Don't want to bake it all the way through like bread or cake.
 
Dressing here an it is not goin in the bird. We LOVE dressing DH an I an I will be making at least 2 9x13 pans of dressing which we will eat off of over the next week after thanksgiving.

3lbs of onions a couple of whole bunches of celery, lots of real butter to cook the onions an celery in, a few beaten eggs, salt pepper, sage maybe a little poutry seasoning an about 2 1lb loaves of very stale dry bread. oh yeah an turkey broth.... I cook the giblets chop them up in the dressing use the homemade broth I do have to use some canned too. We like a very moist almost wet dressing YUMMMMMMMM

Mine is similar: Cubed bread, poultry seasoning (Bell's or your favorite), butter, onions, a few shallots (optional), chicken broth, S&P, and the ingredient that makes it memorable: chestnuts. Prepare chestnuts in the shell one day ahead. With a paring knife, cut an "x" in the soft shell (be sure it penetrates shell). Place nuts in boiling water. Water will stop boiling for a bit. When water starts boiling again, take nuts out and cool. Peel off shell, and the "skin" around the nut. Cut nuts in half. Cover & refrigerate. When making your stuffing, add chestnuts in at the last. The chestnuts will be soft, so stir with care. Their subtle nuttiness and texture will add a touch of taste and class to your stuffing.
 
We have dressing. It has never and will never go in the bird. :)

My mom makes oyster dressing with oysters (obviously), cubed bread, celery, sausage, etc. It is VERY yummy!
 
I saute celery and onions in chicken broth, then add that to the Pepperidge Farm bag of dressing. I also add more sage, some parsley flakes, pepper, and poultry seasoning. It cooks it in the crock pot all day. I have also found that adding a bit of shredded carrots makes it very moist and adds more color.

We eat dressing--not stuffing.

I make the cornbread with a usual southern cornbread recipe, but I add some onion, celery and bell pepper that I have cooked in a bit of butter and I replace part of the milk with chicken stock and add poultry seasoning. and bake as usual.

I crumble the cornbread, add more cooked onions and celery, more poultry seasoning, add some cooked and crumbled sausage, chopped apple, cream of chicken soup, 4 tb. of butter, salt and pepper and chicken stock. Needs enough chicken stock to be very soupy. It looks runny in the pan but all the bread soaks up the stock and it is oh, so very good. Moist enough to not need gravy, but I will have some anyway, thank you!! Bake until brown and a little crusty on top.



My sister makes Crawfish Dressing. Really, really good.

My ex-mil used to make Oyster Dressing. It was ok, but I picked around the oysters. I only like them fried.
 
Wow, I'm boring - I do a simple bread stuffing, baked in the crockpot that I can prep the night before.

Not wild about cornbread stuffing (sorry, y'all!) or meat, fruit and oysters in stuffing.

Although there WAS the year I made White Castle stuffing, just to see what came out.:lmao: (It was ok, but not something to be repeated.)

take away the sausage and add raisins and you have my stuffing.
