DW and I have been twice and while we obviously enjoyed it enough the first time to go back, it is not in any way something we would make a point to do every trip. First of all, we have several local hibachi places that we can dine at and we do like most of our Disney dining experiences to be at least somewhat more unique, relatively speaking, though obviously you can always find a comparison if you try. Secondly, I think this really depends on the chef.
The second time we went was last March just before the shutdown. It was an extended family trip with DW, DD, and myself, and my sister, BiL, niece and nephew, and my mom, so 8 of us in total. With that size group we obviously had a table to ourselves and the chef prepared everything well, there were no complaints about the food itself. But my niece and nephew had been to a local hibachi for the first time just a few months prior and so we thought this would be especially fun for them since they loved that experience. The "performance" part of the meal was what was a bit lacking. The chef was good but I don't know if she was new and a bit inexperienced or with all of the Covid news at the time if she was just a bit sidetracked, but the showmanship was definitely not as good as the first time or some of our local experiences.
It seems that you have the right mindset going in and based on that I don't think you'll be disappointed. My family and I are more than willing to go again but it will probably be a while before we do all the same.
