This one is really easy
Creamy Tomato Soup

1/2 onions chopped and sauted in butter
after onions are cooked add 1 can 28 ounce of chopped tomatoes simmer add 1 cup of heavy cream and 1 cup of chicken broth to taste. puree and eat

I call it fake Italian Wedding Soup

1 pkg of spinach
chopped zucchini onion and carrots one of each
meatballs add parmesean cheese when making meatballs (tiny)
64 ounces chicken broth
Add veggies to chicken broth and then add meatballs.
simmer until meatballs are cooked meatballs should be small
once meatballs are cooked add pastina or any small pasta.

I make an awesome Cheesy Potato soup. I can tell you how to make it, but I don't really have a recipe, so you would have to wing it.

Disclaimer: It is delish, but it is NOT diet food.
 
This is one of my family's all time favorites! It makes a HUGE pot!

Potato Soup

Cook first until tender:
8 cups peeled potatoes, cubed
3 cans condensed chicken broth
3 cans water
1 1/2 cups chopped onion
Then add:
2/3 cup margarine
2 tbsp. chives
2 tbsp. parsley flakes
1 can real bacon bits
Salt & papper to taste
Cook about 20 minutes.
Mix 1 cup flour with
2 cups milk until smooth.
Add to soup. Bring to boil for two minutes. Remove from heat.
Stir in:
1 lb. Velveeta Cheese, cubed
8 oz. sour cream
Stir until cheese melts. Top with green onions. Serve!
 

Tin Can Soup

Brown #1 ground beef or Ital Sausage or combo of both with a small chopped onion, drain.
Add 1 can mixed veggies-I use Vegall Stew veggies-include the liquid
2 cans Stewd Italian tomatoes-I cut them a bit w/ scissors
2 can beef broth
1 can campbells double beef broth
Simmer 15 mins add a 1/2 c to 1/2 c small pasta simmer about 10 more mins.

Mine is similar to this....but for a quick CHEAP meal..
hamburger meat
2 cans of tomatoe soup
a BIG can of VegAll

Mix all together and salt n pepper...

Sooo good with crackers :)
 
Sweet Corn Chicken Soup

Ingredients:
Few spring onions cut finely + few for garnish
A small piece of ginger grated
Half chicken breast cut in small pieces
2 l Chicken Stock
400gm Creamed corn
4 to 6 tbsp corn starch mixed with few tbsp of water
2 egg whites.
2 green chillies optional
Pepper and salt to taste.
1 tbsp oil

Heat the oil in a large pot, add the onions fry till they are soft add the chicken stock,chillies, ginger, chicken pieces, salt and pepper. Boil for 10 to 15 minutes.

Now add the cream sweet corn and boil for few minutes now add the corn flour mixed with the water and boil for few minutes till the soup is thick.

Beat the egg whites with a bit of water lightly, add to soup in a thin stream, stirring well.Serve the soup garnished with the extra spring onions.
 
This seriously tastes just like the soup from Olive Garden.

Olive Garden Zuppa Toscana

Makes: 6-8 servings

INGREDIENTS
1 lb ground Italian sausage
1½ tsp crushed red peppers **
1 large diced white onion
4 Tbsp bacon pieces
2 tsp garlic puree
10 cups water
5 cubes of chicken bouillon
1 cup heavy cream
1 lb sliced Russet potatoes, or about 3 large potatoes
¼ of a bunch of kale

Sautee Italian sausage and crushed red pepper in pot. Drain excess fat, refrigerate while you prepare other ingredients.
In the same pan, sautee bacon, onions and garlic for approxiamtly 15 mins. or until the onions are soft.
Mix together the chicken bouillon and water, then add it to the onions, bacon and garlic. Cook until boiling.
Add potatoes and cook until soft, about half an hour.
Add heavy cream and cook until thoughouly heated.
Stir in the sausage.
Add kale just before serving.

** I used about half this amount last time I made it. With the whole 1 1/2 tsp it was a little too much heat for my kids.

I love this soup too! And you are right, this recipe tastes just like the one in Olive Garden.
My other favorite soup is the creamy vegetable soup from the Dixie Stampede. I googled the recipe and found one that tastes very similar as well. We served it at formal party once and everyone raved about it.
 
Mmmm....soup:

Lentil Soup-Prep time:20 min /cook time: 35-40 min

2T olive oil
1 Cup finely chopped onion
1/2 " " " celery
1/2 " " " carrot
2 t salt

1 LB lentils, picked and rinsed
1 C peeled + chopped tomatoes (canned ok)
8 C veggie broth
1/2 t ground coriander
1/2 t ground cumin
1/4 t ground black pepper

Heat olive oil in large 6 qt dutch over over medium heat.

Once hot, add onion, celery, carrot and salt and sweat until onions are translucent, approximately 7 min.
Add lentils, tomatoes, broth and seasonings. Stir to combine.
Increase heat and bring to a boil. Reduce heat to low, over and cook at a low simmer until lentils are tender, approx. 35-40 min.

If desired, use a stick blender to puree to desired consistency. I usually puree part of it in a blender and add back to soup pot. It's also very good as is.

ETA: I made this tonight and was out of tomatoes so I use 2 heaping tablespoons of salsa. Yum!
 
Nudist Stew (got it from a nudist magazine :lmao: )

1 - 14.5 ounce can of crushed tomatoes
1 - 8 ounce can of rotel tomatoes
1 - 8 ounce can of whole corn, drained
1 - 8 ounce can of pinto beans, drained.
1.5 pounds of chicken, cooked and diced.
1 to 2 southwest seasoning (your favorite)

optional:
Sour cream, shredded cheese, and corn chips

Combine all ingredients in a pot, cook on medium for 30 minutes. Serve with the optional stuff.
 
Potato Cheese Soup

2 cup diced raw potatoes
3/4 cup chopped onion
1/2 cup diced celery
1 tsp. salt
2 1/4 cup boiling water
4 T butter
1 cup canned tomatoes, drained
4 T flour
1/2 tsp pepper
1/2 tsp dry mustard
2 cup milk
1 tsp salt
1/2 cup grated cheddar cheese
6 slices bacon

Combine potatoes, oinion, celery, salt and boiling water. Simmer 15 minutes. Combine flour and butter. Add pepper, mustard, milk, salt, and cheese to butter mixture. Bring to a boil, stirring constantly. Add to potatoes, Add 1 cup drained tomatoes, cut into small chunks. Cook over low heat untill thoroughly heated. Do not boil. Fry and drain 6 slices of bacon. Put crumbled bacon on top of soup when serving.

Enjoy!!
 
Broccoli Soup

2 tablespoons unsalted butter plus 1 TB olive oil
1 medium onion, chopped
3 clove garlic cloves, chopped
1 russet potato, peeled and diced into ½ inch cubes
2 sprigs fresh thyme, leaves only
4 cups chicken broth
1 lb. broccoli, roughly chopped
¼ cup heavy cream
Salt & pepper to taste (be generous)

Optional toppings: shaved Parmesan, croutons or crumbled bacon

Melt the butter with olive oil in a large saucepan, over medium heat. Add the onion and garlic and cook until translucent, about 5 minutes. Add the potato, thyme, salt and pepper, and broth and bring to a boil. Adjust the heat to maintain a gentle simmer, and cook uncovered until the potato is fork tender, about 10 minutes. Add the broccoli and simmer for another 10 to 15 minutes until broccoli seems tender.

Puree the soup with an immersion blender. Add the cream. Bring to a simmer, taste, and re-season with salt and pepper.
 
This one sounds a little strange, but it's a favorite at my house and a great way to use leftover meatloaf. I make my meatloaf with Lipton Onion Soup mix, but any meatloaf would do.

About 2 thick slices of leftover meatloaf, crumbled into about 2 cups water
1/4 head of cabbage, finely chopped
small can of tomato juice, paste or sauce
Optional: small pasta, such as alphabet and/or any type of beans or veggies

Season to taste, but let it cook for a while first, as the seasoning from the meatloaf will season it a bit. It's fun to try different seasonings in this. If you've got the leftover meatloaf, you can improvise with the other ingredients.

I have used the Bear Creek mix & added frozen chopped Broccoli it was pretty good.

I love the Bear Creek Chicken Noodle soup; throw in some extra chicken and serve with rolls...awesome!
 
Crockpot Potato Soup

6 potatoes, peeled and cut
1 large onion, chopped
4 carrots, pared and sliced
2 stalks celery, sliced, including leaves
4 chicken bouillon cubes
1 tablespoon parsley flakes
5 cups water
1 tablespoon salt
pepper
1/3 cup butter
1 12 ounce can evaporated milk

Put all ingredients except milk in crockpot.

Cover and cook on low all day. Stir in evaporated milk during last hour.
 
Mexican Chicken soup

2 tbs canola oil
1 med onion chopped
1 med rib celery, chopped
2 garlic cloves minced
1 tbs chili powder
1 tsp ground cumin
6 cups chicken broth - low sodium
1/4 cup green chilies
1 can diced tomatoes
1 tsp dried oregano
1 cup cooked chicken breasts shredded
1/4 cup chopped cilantro
juice of 1 lime
salt & pepper
avocado
tortilla strips
sour cream
green onion
cheddar cheese

Heat oil in med sauce pan over medium heat. Add
celery, onion, garlic, chili powder, cumin and cook
until onion softens (about 5 min). Add the chicken
broth, bring to a boil, reduce heat slightly and
simmer uncovered for 10 min. Add the green chilies,
tomatoes and oregano and cook for another 5 min. You
can also add a can of corn if you like. Pull the
sauce pan from the heat and stir in chicken, cilantro
leaves,lime juice, avocado, salt & pepper. Top with
sour cream, cheese, green onion and baked corn
tortilla chips (spray with pam, slice in strips and
bake in oven until crispy 400 degrees) If you like
spice, mince up a jalapeño and sprinkle on top.

I use the keep warm feature on my crockpot once I make this soup for the busy days.
