The snow has already melted. They say there is more on the way.

Doug and I are going to focus on getting the basement finished this winter. We took some measurments the other day. The room we are making is for his Nascar collectables and his gaming. At the back of the room we are enclosing the water heater, pump and softener. Next to that will be a pantry for food storage for me. He has to start with the wiring in the ceiling so we can get the ceiling put up. Keep your fingers crossed people. I really want the 65" TV he bought to be down there where it fits. Right now it is in my living room and if you park at the end of my drive (pictured in my last post) you can see it perfectly. I'm not kidding. Don't even get me started.:mad:

Today he finished the ceiling in the bar out in the pole barn. That is he finished putting up the drywall. I get to do all the mud. That's pretty far down on MY list right now!

I'll post pics when we get it all done.

Mel and whoever else I'll put the recipes on here in the next post.
 
FAMOUS DAVE'S CORN BREAD WITH HONEY JALAPENO GLAZE
Source: Famous Dave's Backroads and Sidestreets by Dave Anderson

1 cup yellow cornmeal
1 cup stone ground cornmeal
1 (9 ounce) package yellow cake mix
2 teaspoons baking powder
1 teaspoon salt
1/8 teaspoon cayenne
1/2 cup milk
1/2 cup buttermilk
1/4 cup vegetable oil
2 eggs, beaten
2 tablespoons light brown sugar
2 tablespoons honey
1 tablespoon mayonnaise

Jalapeño Honey Glaze
1/2 cup butter
1 large jalapeño pepper, seeded, finely diced
3 tablespoons red bell pepper, finely diced
1/4 cup honey
1/8 teaspoon cayenne

Combine cornmeals, cake mix, baking powder, salt and cayenne in a bowl; set aside.

Combine milk, buttermilk, oil, eggs, brown sugar and honey in a bowl and mix well. Add to the cornmeal mixture and mix gently - there should be no lumps, but do not overmix. Fold in the mayonnaise. Let rest, covered, in the refrigerator for 30 minutes or up to overnight.

Preheat oven to 400 degrees F.

Spoon the cold batter into a greased muffin tin or a cast iron skillet. Bake for 25 to 30 minutes or until a cake tester comes out clean and the top is golden brown.

In the meantime, make the glaze by heating butter in a saucepan until melted. Stir in jalapeño and bell pepper. Bring to a simmer. Stir in honey and cayenne. Bring to a simmer, stirring occasionally. Remove from heat. Drizzle over Famous Dave's Corn Bread.

NOTE: You can make the glaze ahead of time and store it, covered, in the refrigerator. Re-heat before serving.

Servings: 9

Crab Asparagus Casserole
From the kitchen of the Lazy Doxy

1 can condensed Celery Soup
4 oz. of Cream Cheese, softened in the microwave
½C Milk or Cream
1/4 C melted butter or margarine
1T Dill Weed
1T Onion Powder
1t Garlic Powder
½ T Cayenne Pepper, optional
1-2 oz. jar of Pimiento
1C shredded Swiss Cheese
¼ C shredded Parmesan
16 oz. imitation Crab Meat (If you can get the real thing, go for it)
2-3C Asparagus, chopped into 1” pcs and steamed for 2-3 minutes
½ C frozen Peas, optional
1 to 1-1/2 cups of cooked Rice
Salt and Pepper to taste

Pre-heat oven to 350 degrees F.
In a large bowl, mix together the first 8 ingredients. Add the rest of the ingredients and stir well. Place in a greased, 2 Qt. casserole dish. Bake at 350 degrees F for approximately 45 minutes or until bubbly. Serves 6-8 persons.

Yep, DVC does, in fact, allow 5 in a 1 bedroom when staying on points. What they won't do is provide extra bedding/linens for that 5th person. But it's totally allowed. :thumbsup2

Good news! Glad it worked out.

Dr. Seigle said that the pressure was indeed UP. It was 26, so he says, "The stitch is coming out." I'm like, "uh, no wait, hold on.." And before I could spit out "WHAT NOW?" he whipped it right out of my eye!!! I was shocked beyond belief! My MIL was there, so that was good.

It wasn't a big deal though. Just shocked at the sudden decision. The pressure went down to 15 after that. It was a good appt. He said it looked great. I don't have to go back to see him till Dec. 11th.

Hello ladies and gents.

Just got home from the doc with Jon.

His CT scan revealed that he has no right sinus. That's why he gets all of the infections. There is no where for the yucky stuff to drain.

Anywho...that's not the bad news.

Jon has been complaining for several days about his feet. Most of you know he has muscular and orthopedic issues, for which he wears braces. He has outgrown his latest set of braces...and we're waiting to go back to the ortho in a few weeks.

Well, just to be safe, I had the ped take a look at his feet. He's been in an ace bandage type thing to give his ankle more support. Well, she unwrapped his ankle and it was really swolen. She took x-rays...and we found 2 things.

1. He has a small fracture on his right malleolus...which we can do nothing about. Just put him in a brace.

2. And...both tendons...on each ankle that keep the malleolus (ankle bone) in place have slipped and are now UNDER the bone. Not doing their jobs. So, there is nothing keeping his ankle up, basically, for lack of a better explanation.

He's going to need surgury. They sent the films up to his ped ortho and they want me to call first thing in the morning. Doc just called an hour ago and said surgury it is.

DUDES!!! We've been without power all stinkin' day long! 2 transformers blew this morning around 5am and they just restored us a little after 5pm! :eek: No power blows. :headache:

We were all going insane in the membrane all day long. Well, until I decided retail therapy was in order. :rolleyes1

Worked hard to get groceries bought, laundry washed, outside decorations up and tree isntalled and decorated. Add a crapload of coughing to that and I'm BEAT!

Easy Peasy! :thumbsup2 Just fry a corn tortilla in corn oil or veg. oil for a few seconds until it softens, then bend in half with tongs cook until crispy, but not too crispy, flip and cook the other side. Drain on a rack or paper towels. Nothing like 'em - you'll never eat boxed ones again. :thumbsup2

It's not raining here :yay: We've been for a walk and in a while we're off to the golf club where David is doing a mental golf lesson with some ladies including me. The nerves about WDW have suddenly hit, it's more that I'm worried about not leaving the house nice enough, enough food, pack the right clothes etc :eek:
