My mom and I played Scrabble this morning. I beat her by 20 pts, which is a SERIOUS thing! I never beat her! I'm so happy! :rotfl2:

i totally understand your excitement. That is me and my grandma when we play canasta. She is the champ, but last time we played i beat her so hard! She gave me the entire pot (half the deck!) on the very very last turn! I saved the score sheet so people would believe me and then I brought it home. I might frame it.:woohoo: What can i say I learned from the best!:rolleyes:

So i got home from a terribly busy day and for some reason i got a rush of cleaning energy. I cleaned the cat box, then took food out for dinner and while my meat was defrosting i cleaned the kitchen. With those other yukky boys i usually try to avoid it, but i wanted to make dinner for marc tonight. So i cleaned the counters and realized that there were still tons of utensils and pots of theirs on the counter they never put away...from weeks ago. So i found an empty cupboard and threw all of their crap in it. Hopefully theyll get the message. Ill just keep throwing stuff in there until they realize whats going on.:rotfl:

Off to go finish dinner and then make flash cards! :teacher:

So I have 3, 5 year olds here watching Wow Wow Wubbzy and finally calming down for the evening:thumbsup2 The interesting part is going to be leaving for work since they are sleeping on the living room floor! Jim is going to sleep on the couch so there is no wandering the middle of the night.

The recipe:


Spinach/Artichoke/Mushroom Pasta Bake

Ingredients

* 2 tablespoons butter
* 2 tablespoons all-purpose flour
* 2 cups milk
* A few grates fresh nutmeg (i used a sprinkle of ground)
* 1 10-ounce box frozen chopped spinach, defrosted and excess water squeezed out
* 1 10-ounce box frozen quartered artichoke hearts, defrosted
(I used a can of marinated quartered, but would recommend 2 jars if using jars)
* Some shredded mozzarella cheese
* Mushrooms, sliced (i used one large package fresh)
* Onion, diced
* 1/2 cup marsala wine
* pinch of garlic (I used pre chopped and threw in half a teaspoon)
* 1 box of pasta of choice (I used bow tie)

Place a large pot of water over high heat to boil. Once boiling, salt the water and drop the pasta in. Cook to al dente according to package directions. Drain cooked pasta and reserve.

While the pasta is working, place a large skillet over medium-high heat with the butter, melt butter, then sprinkle the flour over the butter and cook for another minute. Whisk the milk into the roux and bring up to a bubble to thicken. Add nutmeg, spinach, artichoke hearts, salt and pepper, and cook until the veggies are heated through.

In another skillet saute sliced mushrooms and onions until all are caramelized. The add a bit of salt and the marsala wine. Cook for a few minutes to cook off wine. When wine is cooked off transfer the mixture (sans liquid, I used a slotted spoon) into cream sauce mixture.

Transfer everything to a large casserole dish, mix well, and sprinkle with the cheese. Put into oven for a few minutes, about 5, under the broiler to brown and melt cheese.


Makes a LOT of food. Has really neat complex flavors, every bite has something different.

I am off to get another glass of wine, as KC is working late again and I'm bored! LOL.

I'm at work and the boys are off to Delaware. Jimmy has an appointment with his ear doctor, who is located at the Dupont Childrens Hospital in Delaware. Tonight Jimmy's friends Matt and Rose are sleeping over becasue they start their vacation after school today and mom & dad have to work tomorrow. When they get home from the doctor Jim is going to finish up the laundry and clean the living room, dining room, and powder room.

I'm at work and getting very frustrated! Long story short the boss is not telling anyone what the next move is in this reorganization, so I can't complete anything until the next steps are announced:headache:

Well, I'm feeling much better this morning. Not as achy. I've got the kitchen put back together and all the curtains vacuumed and re-hung. I just have to pick up and then I'll take some pictures.

So I took Leo to his riding lesson last night... and got roped into taking some lessons myself! (pun intended) I've done a little riding and loved it, so I'm excited to start. Now I really, really have to win the lottery; we need a horse. :rolleyes:

Delta had bad Reflux as an infant. Didn't gain weight because he was spitting so much up. When he started walking it almost completely disappeared. Just a few months ago he started complaining of reflux again but because of his age it is hard to quantify how bad it is. He is on antacids but he can't tell me if it is better or worse. He can't tell me if it happens once or 5 times a day or if it happens every day. Also, he has an unusually high pain tolerance and can't relay how bad it hurts.

He eats a very bland diet (by his choice). He doesn't like sauces so eats most things plain. He is also a quasi vegetarian (again by his choice). He only recently started eating chicken and trying other meats but still eats very little meats. He also doesn't drink sodas or juice. His diet mostly consists bread, pasta, potatoes, milk, and water.

This test is just to give the doctor some answers. Some reflux is normal but we have no idea if what he has is within the normal range. Also, he wants to see if there is any damage to the esophogus. It will require an overnight stay in the hospital and two days of missed school which he is very excited about.

He has already had a stomach emptying test and we learned that his stomach empties at about half the rate of a 'normal' person. This means that basically when he eats that food sits in his stomach for hours before it moves to his intestines.

Wow! That is serious! I know certain foods makes Lindsey's flair up but it isn't that bad. :hug: for you and him and Good Luck!


Got nothing planned today - I bought a cute brown skort for WDW and tried it on last night and while it did fit just fine, it felt too heavy. I thought I'll die in August if I wear this thing. Me thinks I'll be heading back to the mall to make a return. :rolleyes:

Did you guys hear. MK was closed at 11:00am and didn't re-open until 2:45 due to capacity crowds :faint:

:scared1: We went one year during spring break and that was my biggest fear. We were staying off site as well. Didin't happen but never again would I go during that time. The weather was nice but not so much the crowds.

I slept, and slept, and slept and slept some more. And I feel good! I went to bed about 12:30am last night and woke up at about 8am, read for an hour and went back to sleep until 1pm!!! It was GREAT! :woohoo: It's all the sleep I need to catch up on for the past few days!

Well, we're back from the museum and it was crazy crowded! Not MK crowded, but pretty bad for the museum. And I just don't understand what would make a school administrator think that the week that a ton of local schools have off for spring break would be a good time for a school field trip??? :confused3 There were at least 5-6 school busses in the parking lot, which contributed a bunch to the crowd levels. Just crazy.

The girls behaved themselves pretty well. We ran into a couple of friends from church as well. Now we're home and I'm about to kick the girls outside for a little bit. It's not bad out (high 50s) and sunny, so they're going out to ride bikes.

Only two more days of spring break! I think I can make it! :banana:

It looks like we are buying the TV this week! Thursday to be exact, and heading back to IKEA Sunday with KC's friend Kevin who will be driving us so we can buy the furniture too.

The Dr. was SO fast. I swear I spent more time filling out that new HIPA thing they make you sign than getting examined. LOL He gave me the ALL CLEAR! I can't go back to the gym till all my stitches dissolve, but I can do housework and drive and Um.....other stuff. :rolleyes1

Speaking of chores and stuff, I made the girls clean their rooms before we went to the museum today. I took the vacuum into DD7's room and showed her how to use it and then told her that is her new job. I figured it was high time she learn to help out around the house, right? Next I'll teach DD5 how to dust. :woohoo:

WTG Mom! Lindsey likes to dust as well. I tried getting DR to do it but it didn't work with him. :laughing:
 
Oops Kat you posted as I was I would love the recip but therest of finicky eaters here wouldn't DSIL didn't much like my chickenand stuffing casserole but the others did ! Howevert hey all loved the corned beef!! Tonight was meatloaf another hit as we don't make it very often !!Tomorrow is gonna be simple as I have to wrk 2nd job at 5pm the Sunday of course it's HAM!!

My kids are still up and getting into stuff. Well, mostly DR. Linds is watching Ghost Hunters but keeps talking though most of it. LOL

I did have a pretty good day though, other than my idiot ex. :rolleyes: I voulnteered in Lindsey's class this aternoon and had a fun time. I helped the kids out with their phonics and then they cashed their coins in at the store.

I ended up talking with Lindsey's teacher who said that she is doing wonderful in class, behavior and academically wise. She said she thinks Lindsey did really well on the Gifted & Talanted test and wouldn't be surprised if she does show up on that spectrum. They don't start G&T classes until 4th grade though. So, we'll see how it goes a few years from now. She'll be tested next week for the advanced reading. Plus, she'll be trying to get Lindsey in with a more challenging teacher next year. Overall I'm pretty happy with that because Lindsey needs it. If she doesn't she gets bored and her behavior goes all whack.

My ex is an idiot. I got an e-mail from him this morning saying that he has been trying to call me, text me and e-mail me all week to talk to the kids. We've been home and no calls were made to my house and no messages were left. My cell is turned off so no calls or texts can go through. And its funny how I was able to get this email but no others. :rolleyes: He's just trying to pick a fight with me and I'm trying hard not to give into him. You would think that after all that b&%$@ing though he would have picked up the phone and called the kids. Hahaha...NO! Idiot! :rolleyes:

My babysitter did stop by to see the kids and brought them some sidewalk chalk and a DQ ice cream cake for Easter. She'll also be taking Lindsey on Sunday night for a sleepover. She's like a second grandmother to my kids and she is the bestest. LOL

OK...enough of my rambling. I gotta get the kids ready for bed and want to watch some of my DVR'd shows. DR had his Easter party today and came home loaded up with candy. Lindsey has hers tomorrow and I'm sure it will be the same thing.

Hey Guys! Just home from our grocery run. I had to wait around for a lady to stop by and buy an easel that I was selling on craigslist. Another $15 in my pocket! :thumbsup2

The girls are driving me batty today with their bickering. I think they're bored, but I've got things I want to get done. We got a movie from the RedBox at the store, so hopefully that will keep them busy for a little while. I need to mop my kitchen floor. I just want to get everything back in it's place and have it all clean so that I can take some pics to post here.

All this talk about WDW planning is really making me jealous. So, I'm going to post my plans for Ip Dip II/Girls Weekend....

Friday, Oct 9th - late morning flight to Orlando. ME to hotel (possibly sharing a room at POP). Rest until MNSSHP at 4:00 pm. MK until close that night!

Saturday, Oct 10th - Epcot! F&W noshing all day. Ride TT and Soarin with Tracy & Bill and hang out with them and anyone else who is there! Margaritas in Mexico and Grey Goose Slushies in France are required!

Sunday, Oct 11th - AK day. Breakfast at Tusker House with Scott. Ride EE as many times as possible. Ip Dip II dinner at Ohana with everyone. Lapu Lapu's are required!

Monday, Oct 12th - MGM day. Ride TSM & RNRC. Fly back to Indy as late as possible.

So, any opinions on the plans? I think I'll do the dining plan, so I'll need one more table service, probably at Epcot on Saturday. Any suggestions?
They look great. Saturday afor lunch I plan on doing Le Cellier if I can get an adr.
Anone is welcome if anyone is going to be there. Just let me know to add you.

All this talk of hair colouring, I'm sure I'll be there in a few years, just the other day I found one lone silver hair, I am only 25! :sad2:

KAT hates to plan parties that include KC's exes. Getting the TV today.

JO is still painting. The picnic at AK looked interesting but starts with 3 people.:confused3

JANET is dealing with the job reorganization. Jimmy had an ear appt.

MEL's checkup went well. Bob had to work from home. She had the Chinese cook for her last night.

DAWN colored her hair. The Fockers do a good job of keeping all the hair coloring places in business.

JODI went to the Children's Museum.

V is going to ride now. UM, the last time I rode a horse, after a 10 year absense from such an activity, I couldn't walk right for about a week. I guess I don't use the same muscles during any other activities.:rolleyes::lmao:

DEB is busy at work.

CEL BEL is tired of playing den mother.
