I had an email a little while ago from my friend and neighbour, her Dad died suddenly yesterday, he was only in his 60's and was found dead on the sofa watching TV :sad2: She is devastated as it was so sudden and the fact the police didn't tell her :eek: Her hubbie is a policeman and is not impressed!

As you can see I have had very little time for dissing. And I have missed it so much. My boss is totally re-flowing our department. He asked us to trust him and go with it and if a year if we are not a better engineering group then he will resign. He even turned in an undated signed resignation letter to the general manager as proof. I decided to trust him and follow him for one year to see where it goes. I think he is growing on me :goodvibes

However, we are backlogged and he has asked me to work OT until we get caught up. So no more off days for me.:sad2: Its ok as we could really use the money for Christmas and other stuff. Plus it is only temporary and I still have the right to say 'no, i only want to work 32 hours this week'. So it is working out. :goodvibes

Kids football is kicking my but. 4-5 hours on the field every Saturday until Halloween.

Today is mom's birthday. If anyone wants to wish her a happy birthday on my TR (that is the only thread she knows how to get to :laughing: ).
 
I use the cheapest cut of roast I can find! Throw that into the crockpot with some Adobo seasoning, onion, garlic and leave it there until it's falling apart. Shred it up and throw it in some fried corn tortillas and it's a party in your mouth.

Shredded pork? Even better. Put a little oil in the pan and saute that pork until it's warmed up. Throw that into warm corn tortillas, with a little fresh onion and cilantro, fresh salsa and you've got Carnitas taco al carbon! YUM-O!


I'll teach you guys tacos, but you've got to teach me Cheesesteaks and Pierogies (sp?)!

Tonight I'm making green chili enchiladas, fideo, and calabasitas. YUMMY! I feeling very in touch with my browness today! Aiiiiyaaayayaya!!!!! Arribbbbaaa!!!!

I'll share the recipe we're having tomorrow - which as I mentioned, is one of our most favorites. A caveat though, it is NOT low-cal by any stretch. We don't eat like this all time - DH does the cooking during the week (he gets home before me), so we're pretty good then. But when I get to cook on the weekends, it's no holds barred (or butter, or cream, etc. :lmao:) Anyhoo, this one is really simple...

You'll need 8-9 chicken pieces (I always used skin-on bone-in chicken thighs). Shake them in a large paper bag with flour, salt, pepper and paprika to coat. Brown the chicken in a saute pan with butter/oil. Place the chicken in a baking dish and pour 2 cups heavy cream over the chicken and sprinkle additional paprika cover the chicken. Cover with aluminum foil and bake in a 300 degree oven for 2 hours. The chicken will fall off the bone! I serve it with buttered egg noodles and peas.

I usually also serve my green salad with apple cider vinegrette - take 2 cups apple cider and reduce to 1/3 cup. Mix in 2 tbls apple cider vinegar and add canola oil to taste. Serve over mixed greens with cheddar cheese, apple slices, red onion and toasted walnuts. Mmmm mmmm.

Maybe we could all use a funny story. Well, it wasn't funny when it happened, I was incredibly annoyed, but it is so ridiculous that I just have to laugh about it now...I dutifully checked my work voice mail since I've been off a couple of days. I had gotten a voice mail from "Overnight Delivery Service X" - man says, "I have a package for your company, at X street address, but your suite number is not on here. Can you call 1-800-XXX-XXXX and give us your suite number so we can deliver the package?" So, even though it's a day off, I call the number and give the lady who answers the tracking number, tell her I was told to call and give them the suite number (now this was AFTER I spent 5 minutes trying to actually get a person on the line). She says "I'm so sorry mam, I can't take the suite number, that would be changing the address and I'm not allowed to do that" :eek: You're kidding me, right?? I say, "so why did I get a message asking me to call you with the suite number?" All she will say is "I'm sorry mam, I'm not allowed to take the suite number, the sender would have to call with that information". :headache: So, I ask " Can you tell me who sent it?" She says, "Oh, yes mam, X company sent it." So I ask her for an address so I can track this company down and can you guess what she says????

"I'm sorry mam, I'm not allowed to give you that information." :faint:

Do you have life insurance? If you don't, get it now...not I'll get to it, or it's too expensive, or whatever reason. I'm guilty of procrastinating as well. We just got a term life policy for my 36 year old non smoking DH for $34 per month and $53 per month for me, 38 and non smoking. Both policies are $500,000 and 20 year term. There are lots of other options.

You're right. I have a small policy, but not enough for D to replace me with a nanny or whatever if something happened.

So, none of us are moving very quickly this morning. Our friend is heading into Boston with her flight crew a bit later, but we have no real plans. It's only supposed to be about 67 here today, so no boat...

Chicken Broccoli Casserole :cloud9:

2-3 crowns broccoli
4 chicken breast (Or what ever piece of chicken) cooked and shredded
1 package of mushrooms sauteed
2 cans cream of mushroom soup
1 cup mayo
2 cup milk
3 cups cheddar cheese
1-2 tbsp curry
1 tsp lemon juice
salt and pepper
1 sleeve of saltine crackers crumbled for top.

layer steamed broccoli, shredded chicken, then mushrooms into casserole dish. Mix all other ingredients together in bowl and pour over the dish. crumble the crackers over the top as the crust. Bake at 375 for 45-60 minutes until its bubbly and golden brown. let it cool and serve it over rice. :goodvibes

The best part is, it makes a huge amount and it's even better the second day. I love having it as leftovers.

Cub Scouts was a huge success. The apple bird feeders were great T, and Jim said SUPER easy to do. ALso, Just as an FYI MArshmallow Fluff works too if you have anyone that has peanut allergies! A bit messy so just have lots of papertowels/baby wipes around!

Tonight is the Cppkout/Campfire/OVernighter. The Tiger Scouts only go for the cookout/Campfire part. They aren't allowed to sleepover until next year. Which is fine becasue I don't think Jimmy has any interest in sleeping outside!

Next weekend is the big fundraising kickoff. Anyone want pocorn? Let me know, I will ship!

While they were at their meeting, my neighbors returned from vacation so i wound up going out with them to get something to eat. IT was nive just to get out of the house for an hour. Afterwards we came back and just hung out on the porch and chatted!

This morning we met up with my friend Joy and her 2 kids at the playground. The kids ran around playing for a while and then we took them to McD's for lunch. Now we are back and the boys are "resting their eyes" befoore the Campfire!

I don't know what I am going to do while they are out tonight.:confused3

Rockie’s mom was actually talking to and looking at us today. It takes a lot of effort on her part but she is doing it. She said she is ready to get out of the hospital. She wants everyone to quit messing with her and she has had a few choice words for the staff. The latter is always in making fun and not serious. That tells us she is definitely doing better. She is still in the critical care unit. The doctor says it is very encouraging but do remember things could go the other way. It’s just nice to see her acknowledging that we are there. That’s what you really want them to know!

I let her know there were a lot of people she didn’t even know pulling for her and she nodded. So keep it up, please!

I have sciatica as well. The best thing I can tell you is to move. I notice the less I move, the more it hurts. I also get on all fours and lift my legs up from a bent position to a straight position. One thing that triggers the pain is bending down from the waist, try to avoid that.

Airfare kills us, too. We'd be in WDW way more often if the airfare wasn't so stinkin' expensive.

Good advice. We got life insurance for all four of us when Evan was born. My policy is only for 100K, but Andy's is 500K. I think the kids are 20K each.

sleep with a pillow between ur knees, it helps me a lot. u have to keep your hamstrings stretched well too.

i am soooo tired. i am falling asleep on the desk here. i am in KCs office, i came here after work, which was bad today. too many cooks in the kitchen situations today. urgh. on the way home we are going grocery shopping for food for L & her fam since they are coming on wed! Then sleeeeeeep.

I'm baking two pans of homemade chicken enchiladas right now! Man, after T got to talking about all the gorgeous Brown People food she was making, I was DYING!! LOL

Nothing exciting going on here. SD has a cold. He's sniffly and congested but not too bad. Dayquil knocked most of it out of him. He's probably needing the rest with tennis every day so that's fine! I got Z-packs for him and Gus just in case we need them before our trip.

Bob's installing a new security light on the back of the house. There've been a couple of break ins around town (in an otherwise QUIET area..) so we thought better to light it all up!

Gus is waiting to find out if his friend can spend the night.

I'm going to spend my evening PACKING (Did you hear that T?? Did'ya???) And writing the rest of the notes for the sitter. Also, I upgraded our Studio to a one bedroom! WHOOOOO HOOOOOOO!! I just decided this morning.

Some of you may not understand this, but you all know what my boys mean to me. Murph gets custody if anything were to happen and the life insurance I have through work has her as the beneficiary so she doesn't spend a dime of her money to take care of them. I wanted to make sure my boys are taken care of with no unneccessary burden to anyone else.

Campfire/Cookout were a HUGE success. Jimmy fell asleep in the car :woohoo: Soccer in the AM, then grocery shopping. Other than that not much planned for the day.

Cub Scouts was a huge success. The apple bird feeders were great T, and Jim said SUPER easy to do. ALso, Just as an FYI MArshmallow Fluff works too if you have anyone that has peanut allergies! A bit messy so just have lots of papertowels/baby wipes around!

Well the party last night was rubbish, Ellie had a good time so that was great but it was just too loud, yep I'm getting old, to chat with anyone and none of the adults danced so was very boring :sad2:

Today is so busy! We have church, then I'm going to the store to get stuff to make dinner for my friend's family. We have to clean the house a bit, pack and B's got youth group tonight. Tomorrow night B has dance and Tuesday we leave for San Antonio about lunchtime!
We fly out soooo early Wednesday, that we're going to stay at K's mom's. Also, his sister's bday was Thursday so we're all going to dinner. :thumbsup2

UGH! I go back to work tomorrow, I want to go to WDW! I started a spreadsheet for next Sept to figure out how many days I need (ok want).

Anywho, I decided to apply for the Mom's panel, not sure about my answers, but they were honest and who I am. I think a single person's perspective is needed;)

Janet - yes I am planning on going to Italy in the Spring. I'm suppose to go with my oldest cousin, Carol, though she is making noise about not going. I'm still going either way. I was going to go with ABD, but they substantially raised prices and took away all the discounts they offered in the past. Right now I am leaning towards Trafalgar tours. The cities include Rome, Florence, Venice and Pisa.

Of course this means only 1 Disney trip next year, but that's ok, I ended up with 4 this year, including Thanksgiving.

Dawn - plan looks good, so are you seing Mel;) If I don't fit in her suitcase, can I try and fit in yours?
