How about a plant? I know my DD's teacher likes to garden so I bought her a nice plant/flower she can plant in her yard. I can't remember what it is, pretty green leaves with pink flowers, but I paid under $4 for it at Lowes.
My ds is still in preschool and has multiple teachers/assistants...so we brought in a big sign and a box of joe from Dunkin Donuts and a dozen donuts for an early morning treat for them.
A friend is bringing the teachers flowers tomorrow.
Another is sending in apples with her kids for each of the teachers.
I'd also considered Dunkin Donuts/Starbucks/Target/Barnes and Noble/Walmart/Borders/local restaurant gift cards...and these are all 'teacher approved' according to my teacher friends. They'd love any of them they all said.
However, they said their favorite gift is a handwritten note/card from the students and parents.
Do you have a nice bakery or something near you? We got my daughter's teacher a fun looking fruit tart and put it in a bag with a fancy napkin and matching plastic silverware. We tied a balloon to it and called it done. Not too expensive but I think that she will like it!
