I do kinda agree about the tips in envelopes for things outside of mousekeeping.

For a rough calculation of food and drink you can look to the menus online on Disney's website or the app but with the understanding the price may change if Disney takes an adjustment between the time you look and when you actually are there (they have in the past typically done adjustments multiple times a year).
 
Just as an aside, in my many years of restaurant work I never saw anyone leave a cash tip in an envelope and if you left an envelope on the table I would likely think it was trash and throw it out.
That's a good point, if they saw the picture the OP is talking about maybe not but honestly I would just assume it's the guest's property and they accidentally left it as opposed to them trying to tip in cash via an envelope which is not a norm to do that. In other words it may cause confusion or excessive explaining by the OP each time.
 

Many, many years ago, early on in our adventure together (36 years ago) DW was a server, we tip well, most servers work their butts off
