Looking for some good tasting meatless meals. Not a big fan of things like tofu (sp?) and would like to keep it simple. Thanks!
 
Cheese and bean enchiladas
Veggie chili with rice
Mushroom stroganoff
Grilled cheese and tomato soup
Pasta primavera
Lentil, pea, or bean soup
 

How about baked potato bar with lots of yummy toppings..
 
bean and cheese enchiladas
salad night
pasta w/ garlic bread
-tortellini, ravioli, lasagna, manacotti, lasagna, ect...
vegetarian chili w/ cornbread
cheese pizza / veggie pizza
rice and beans
sandwiches loaded with veggies
soups galore
stir fry
baked potato bar
corn bake casserole
hash brown casserole
tuna noodle casserole (assuming fish is acceptable)
vegetarian tacos


these are some of my kids' favorites.
 
Eggplant Parmesan! :)
 
I don't like tofu either but I LOVE the soy meat replacements like Boca and Morningstar. We're vegetarians and often have the boca meatless burgers, boca meatless chicken sandwiches, a pizza with no meat, pasta is huge around here, scrambled egg sandwiches, bean burritos, black beans and rice, etc. We get in a rut of pasta once a week, burgers, chicken sandwiches, etc. but are trying to eat healthier so I'll watch this thread for suggestions :)

This sounds good. And the mushroom stroganof.
I have very picky eaters in my house so it is tough to come up with new stuff during lent. One can only eat so many fish sticks and grilled cheese.
 
Veggie lasagne - lots of courgette, mushroom, onion, peppers etc. - YUM.
 
lots of ways to do risotto meatless. It's very filling and there's no end to combinations you can try
 
spinach lasagna. We had it last night and it was so good.
 
We only eat meat one or tow nights a week nayway at our house. A few of our favourites in winter are:

Cheese soup served with homemade pretzles (if I have lots of time) or garlic/herb biscuits and salad

Roasted roots (potatoes, swet potatoes, onions, carrots and garlic cut in small pieces and tossed in loive oil. Bake at 425 for about 45 minutes stirring every 15-20 minutes to keep olive oil coating everything.). Season any number of ways when it comes out of hte oven. We have this with salad and either garlic bread or cheese quesadillas.

Vegetarian Chili servesd with corn chips and cheese.

Huevos Rancheros (tortillas with refreid beans topped with eggs (scrambled or fired) and sour cream/salsa

Pasta bar (plain cooked pasta and a variety of ingredients each person can top their pasta as wanted and then toss it with their topping in a skillet for a minute or so to heat)
