When I took the culinary tour at AKL last month (and it's free!), we sat at the counter at Jiko's. The chef served us the Taste of Africa, which is an appetizer, I think, 3 different kinds of dip and Pita bread. Then he explained how the different dips have different spices, and the one you like the best helps them know which entree you might like, since each of the 3 has the same type of spices as certain entrees. I don't remember him saying exactly which spices were in which of the three dips and which entrees related to which dips. But the overall idea was kind of interesting.
