What's the 'going rate' for restaurants and how do we do it for the villa (we're staying at SSR for 3 weeks) - daily, weekly or all at the end?

For table service restaurants, the usual amount to tip is 15-20%. For housekeeping at SSR, I would tip daily.

Housekeeping is usually $1 per adult per day (your cleaning staff may change so tip daily)

Actually you tip based on the toal before tax - usually they will print a guide on the reciept - 15/18 % - to let you know how much to add.

I think they add 18-20% quotes now, not 15%. Anyone confirm?

Definitely 18-20. Your underneath the total there is an amount which they calculate at 18% and then below that, they do it again at 20% so you can see the differences. If you want to use one of the suggested amounts, you just fill it in accordingly in the space provided, however you are free to include whatever amount you see fit.
