Can anyone tell me what to expect in May, probably mid-May? Looking at the 15th - 17th. Other than grad nights, are there any conventions near this time? Weather? Promotions? Rehabs?

Mid May should be the start of Grad Nights. Comparing your dates to the dates of Grad Nights found here: http://www.disboards.com/threads/2016-calendar-of-events-school-breaks-and-dlr.3434866/ you'll miss the first few Grad Nights in May.

The weather can be hit or miss. I've been down in May when it was cool and overcast - we wore hoodies for most days and we are from the Wet coast. We've also been down in May when there was a heatwave and temperatures were in the upper 90's or low 100's. We died.

I like using wunderground for weather questions. They have a very handy historical weather calendar than can show you the average temperatures by month over the course of many years.

Really though, it's weather and it's California. It can change from 60 degrees one day to 90 the next.

It's too early to really know what the rehab schedule will look like in May, other than we know that the Rivers of America (Tom Sawyers Island, Mark Twain, Columbia, and Canoes), Fantasmic!, and the Train will be closed. The Hyperion theater will also be dark (probably - the new Frozen show is slated to debut in the summer, but they haven't specified a date). We may not know if anything else will be closed until much closer to the date (e.g.m anything from 45-day/6-weeks to just a few days in advance).
