Taking a service animal on a cruise is much more involved than a land-based vacation. Being that your cruise only involves Canada and the U.S., maybe that helps to simplify matters a bit, but you still need to get all the proper documents and approvals. The first step is to contact DCL's Special Needs Department (Phone: (407) 566-3602, Email: SpecialServices@disneycruise.com) and inform them you'll be bringing a service dog. They should be able to direct you to the proper process. I wouldn't trust info from the regular reservations number.
I flagged a few threads that seemed particularly informative, but at the moment I can only find this one:
One other tip I had read was to bring multiple copies of your documentation, just in case it needs to be collected from you again onboard. I'll keep looking for other info.
if you go to Cruise Critic and check under their cruising with Disabilities thread, there is a long time cruiser with service Dog that has a huge thread full of helpful information.
Not sure where I saw it ( on a TV special somewhere) or which cruise line it was, but they have little places for your dog to go potty with real grass and a fire hydrant, just for service dogs. Loved the idea
Tinkerjo, I've talked with special services and I'm told since we have a veranda that they would put a potty station(as I call it) on our veranda. I was given a choice of on our veranda or somewhere else on deck. I forget where.

I do know that on the Wonder there is a pet relief area on Deck 4, forget if it was aft or forward. Towards one of the ends, not right out in the middle of the ship.
I saw it when running laps one of our sea days.
