Yawn, stretch....can't believe I'm the first one up.

I'm not a gourmet cook like some of you so I left some chocolate french toast and double chocolate muffins on the counter...all low-carb, fat-free of course......and the latte machine is up and running...Colin ended up staying the night(oh my, in the guest bedroom of course, there are little dragons around) so once he's showered and shaved, he'll be glad to make one for you.... Enjoy!

I have been terrified ever since, but try very hard to hide it because of the kids. Tornado season is here now. There should be one any day.

Here it is:
Breakfast Lasagna
Crystal Palace, Magic Kingdom

Pastry Cream

1-1/2 cups milk
1/4 teaspoon salt
1/4 cup all-purpose flour
3/4 cup sugar
1-1/2 teaspoons vanilla extract
6 egg yolks

Make Pastry Cream First:
In a 2 quart saucepan, combine sugar, flour, salt and milk over medium heat and cook stirring until mixture thickens. In a small bowl with a fork, beat egg yolks slightly, beat small amount of milk mixture into yolks. Slowly pour egg mixture back into milk mixture. Stirring constantly, cook over medium low heat until mixture thickens. Remove from heat and stir in vanilla extract. Chill cream until ready to use.

For the custard:
2 eggs
1 C. heavy cream
2/3 C. half-and-half
1 T. brandy
1/2 t. nutmeg
2 t. cinnamon
1/2 c. sugar

Whisk all ingredients in a bowl until mixed well. Chill until needed.

For the casserole:
3 frozen waffles, toasted
3 C. cubed pound cake
2 bananas, sliced
1/2 C. frozen raspberries
1/2 C. frozen blueberries
4 frozen pancakes, heated
1/4 C. brown sugar

For the garnish:
1 C. Berries

Preheat oven to 350 degrees.
In a buttered 9x9 baking pan, layer ingredients in this order:
the waffles
3/4 C. of pound cake
half of a sliced banana
1/4 C. frozen rasberries
1/4 C. frozen blueberries
1-1/2 C. pound cake
1/2 of a sliced banana
1/4 C. frozen raspberries
1/4 C. frozen blueberries
the pancakes
the remaining pound cake

Press down on the layers to pack firmly. Slowly add the custard mix until the entire lasagna is saturated.
Bake for about 60 minutes.
Top with the pastry cream and a sliced banana. Sprinkle the brown sugar over the top. Place under the broiler until the sugar is just browned, watch carefully, this happens quickly.
Garnish with fresh berries. Serves 4 to 6 people.

OK, I made this for Easter brunch. I made 1/2 of this recipe and fed it to 4 people and still had leftovers.

The offer stands for sending a get well card... but then, you'd have to explain who I am, I guess, and then the word will be out that you live here, and then the N-word might read all the nice things we say about her and get a big head.

QOTD: Thunderstorms... I do pretty well as long as there's no chance of a tornado. I feel about like [color=FF66CC]l-kniT[/color] does. I try to stay brave for the kids, but since I'm glued to Doppler Five Weather Watch, I think they have me figured out. I lived north of Chicago when the tornadoes hit Belvedere and a funnel cloud lifted our storage shed out of our back yard and dropped it in a neighbor's yard! I have a recurring dream that I am up on our deck and can see a tornado coming and people are out in the yard and don't see it, and I'm screaming at them but they don't hear me as it gets closer, and closer, and then just as it's upon us, I wake up. Wonder what Freud or Bichon Barb would make of that one?

Aaaugh! I forgot for a minute that I am a responsible mom and Katie is about to be late for school! TTFN!

my computer is infected w/ something. It took me 25 minutes just to post this. What type of spyware etc do you reccomend that I buy today and install? Pop ups are everywhere!! Can't get onto any programs w/o a major pain. We scanned the whole computer last night and it took hours! Didn't detect any viruses?? Does that sound normal? We have Norton antivirus corporate edition. Please pm me b/c I don't hink I can get back on boards. I'm posting this from page one and having trouble typing. it keeps stopping!! UGH help....
