My bbg is not the traditional NC BBQ in the strictest interpretation. I smoke the meat until it's pretty dry. Then I baste it with my vinegar, lemon bases grilling sauce. The meat soaks up the grilling sauce, and the end result is this smoky, tangy meat that is heaven to the taste buds. You do not need to add bbq sauce to it if you don't want to. NC Belle prefers mashed potatoes over slaw. We both like hush puppies.

They start your meal off with a huge basket of hush puppies (all you can eat), the pork BBQ is true NC BBQ all the way with your choice of the Eastern Carolina vinegar based sauce or the Western NC tomatoe based sauce. It is also seved with slaw. For desert, the best peach cobbler in the Triangle. Awesome.
