Taco toppings

We are having a taco bar for DS's birthday celebration tomorrow. We will have both meat (buffalo) and a vegetarian filling. I'll make refried beans and possibly Spanish Rice (from a mix :rolleyes: )

For toppings I am thinking

tomatoes
lettuce
black olives
avocados
cheese
taco sauce

What else would you have available for the taco bar?

as doxdogy said, SC and onions.....That is a great idea, the kids will love it..Come to think of it, I love it, too. Can I come?

Being a Vegetarian myself I prefer the "taco cheese". The reason....you get the taco seasonings flavor in the taco. When you prepare the meat you put taco seasoning in the meat. Somehow the taco loses it flavor without the seasonings. Just gives it more flavor. So perhaps you could offer both kinds of cheese.
 
get 2 kinds of shells - the soft tortilla and hard tortillas.

We just did a taco bar at work for one of our birthday lunches and we also had:

chopped jalapenos
chopped cilantro
sopapillas
shredded chicken for chicken tacos
 
soft AND hard shells.....we like both in our house!
 
Picante sauce.

edited to add: Nevermind, I see you already have taco sauce.
 
ladydancer--I use ground Boca and prepare as I do the meat filling with onions, taco seasonings, etc. I will make that tomorrow as well since DS's Godfather is vegetarian. I served that one evening and I was the only one who knew it was not meat ;) . I had a hard time convincing them after the meal that I had used the Boca product. (Makes a decent pot of chili too).
 
what are you doing for the veggie filling? Soem vegetarians love the "fake" meat, others hate it. Personally I'd suggest doing 2 fillings, both of which the meat eaters would like 2

One owuld be black beans, seasoned with taco seasoning

the other a vegetable filling, probably zuchinni, onions, bell peppers, seasoned with salt pepper and lime juice.

Spanish rice is really easy to make from scratch

my basic recipe (for a side dish for 4 people) is 1 cup longgrain rice
1 1/4 water, 1/2 cup V-8 juice, 1/2 salsa

heat water, V8 and salsa to boiling, add rice and turn to very low heat, cook until tender, 20-30 min or so depending on the rice.
I do it with brown rice now and the only difference is I soak my brown rice for an hour before cooking.

You can spice it up with chlli powder, cumin, fresh cilantro etc. It jsut depends on my mood and what I have on hand.
 
That Spanish rice sounds easy enough, sha_lyn. I may just give it a try. I have basmati rice that I hope will work. Do you think I could flavor it with my soyrizo "sausage" product?

sure, for a main dish I add browned groudbeef and top the whole thing off with lots of cheese.

I use only brown basmatti rice now, so I would say your basmatti would work fine. You mgiht want to give it a test run just to see if the liquid amount work right with your rice. As a general rule I use 1 3/4 cup liquid for 1 cup of rice.
 
What time does this party start? I could bring a frozen bucket of margaritas!::yes::

If you are crunched for time - some stores have lettuce shreds which are perfect for tacos. Great choice for your meal!
 
Corn, I like mexican corn on my tacos and I love corn tortillas for the shell.

I have tryed that Boca meat several times and just absolutely hate it! Guess it is all in what people like. I am suspecting perhaps the answer lies in the fact I just don't like the taste of meat and the Boca is suppose to imitate the meat taste, I guess.

The one and only reason I am a vegetarian is because I don't like the taste and texture of meat.
 
Since it is a party I would have the Nacho Chips so you can make "Nachos Bell Grande"...and lots of salsa esp. if adults are drinking margaritas!

a few vegetarians I know are like that. They can't stand the texture of meat.

I wish I had the recipe a friend use to use for a veggie taco salad. I have some friends who are vegetarian that really do miss the texture/taste of meat.
She took extra firm tofu, squeezed all the moisture out of it the frozen it for 24 hrs. after thawind she owuld crumble it and fry it up with Braggs and some other items.

she served it to a large group of boys, non of them had any idea it wasn't meat.
