Swim with the dolphins at water park?

Not that I know of. But you could go to Discovery Cove which is a part of Sea World. We did this one year and my kids did enjoy it. It is a bit on the expensive side, but you do spend the whole day there, lunch included and snorkeling.
 
You can't do it at a Disney water park, but it is available at Epcot. Dolphins in Depth is a behind the scenes tour at the Living Seas. Also pretty expensive though.
 
Dolphins in Depth at Epcot for guests over 13. It's a 3.5 hour backstage tour with a trainer who teaches you about dolphins and you may or may not be able to interact with them (its really up to the dolphins, if they are feeling friendly). You will get your photo with one and a t-shirt.

I belive it's $150 per person. There is a 15% off coupon in the 2004 Birnbaums guide in the back. I do not think park admission is needed.
 

Ive done a lot of dolphin swims and by far the best one (best interaction) was at Discovery Cove (Sea World). Yes it is pricey (but what isnt in Orlando) but very worth it. You need rsvps since they only allow 1000 in a day. Id try to get a morning swim in since the dolphins are well rested (they do roatate them out). Get an underwater camera (disposable is fine). There are places to eat, and shop, and other things to do as well (other pools for animal viewing).

My family also did the Discovery Cove trip in Aug. 2003. Although they take reservations for 1000 people, there are only 500 slots for the dolphin swim. (This is what I was told.) Also, another reason to make the dolphin swim reservation early in the day is because of possible thunderstorms in the afternoon. I thought we got the reservation on the phone but the actual swim time was assigned when we arrived at DC. We arrived an hour before they opened and the earliest time we could get was noon.

AAA has discounts. (Or at least they did last Aug.) Expensive, but worth it. The children (8 & 10) would jump at the chance to go back there.
