Sweet Potato Recipe Ideas!

Hey all! Sweet potatoes are my favorite! Anyone have any recipes that use them/for them instead of just marshmallows/brown sugar on top? :)
 
I have been on a sweet potato kick lately. I have just been baking them and then putting some salt, pepper and cayenne pepper on them. YUMMY!
 
I love them, but every time I try to make them, they come out soggy. :sad1: So I guess I need some recipes too!
 

I cook them in the oven with some olive oil and sprinkled with sea salt, thyme and oregano. Everyone loves them!
 
I bake them, make "pudding" out of them and love making sweet potatoe pie!
 
I cut them into small pieces and roast them in a mixture of olive oil, honey, cinnamon and S&P. Delish! I also sometimes mix whatever other root/fall vegetables I have...butternut squash, parsnips, carrots, etc. Just make sure they are all cut similar sizes.

I also cut them into long wedges and oven bake them with olive oil, S&P and whatever seasoning compliments the rest of the meal...cayenne, thyme, cinammon, etc.

And lastly sweet potato fries or chips are a big hit here...also seasoned the same as above.
 
we have substituted them for regular potatos, no extra sugar or anything. turns out they are much better for you than a white or red potato.

and since we like potato salad, we have found several recipies on the internet for variations of potato salad using sweet potatos.

and they are great when grilling!!
 
I LOVE sweet potatoes! However, I can't really cook very well so my recipes are very simple.

I cut them up into fries and sprinkle them with olive oil, salt and pepper, paprika and cinnamon. Then I bake them for 30 minutes at 375.

I also mash them up with butternut squash and some butter to make a pie - that's SO GOOD! The best way I can get DH to eat veggies!!
 
Calico potatoes

Sweet Potatoes
Red or White Potatoes
Onions
Green and/or Red Peppers
S&P - We add Cavendar's too
a bit of oil
sautee in a heavy skillet on top of stove until potatoes are cooked and onions are carmelized.
 
This is my DH's favorite sweet potato recipe. Anytime I take it to a gathering, every bite is eaten. I have had many people tell me they'd never liked sweet potatoes before but love this recipe.

Auburn Sweet Potatoes

Ingredients:
3 cups mashed sweet potatoes (bake potatoes first, and peel)
1 cup brown sugar
2 eggs, lightly beaten
1 teaspoon vanilla
1/2 cup milk
1/2 cup melted butter
.
Topping:
1/2 cup brown sugar
1/3 cup flour
1/3 cup melted butter
1 cup chopped pecans

Preparation:
Combine first 6 ingredients. Pour into a buttered 1 1/2 to 2-quart casserole dish. Mix remaining ingredients together and sprinkle over top. Bake at 350° for 30 to 40 minutes, until hot and browned.
 
I bake them in the oven with beetroot and carrot with some cumin and severe them up with some goats cheese for a warm salad. Throw in some green beens, rocket and baby tomatoes on the top and it is a nice veggie meal.

I also make a sri lankan curry with Sweet potato, carrot, and cauliflower and serve it on a bed of rice.

Another fav is to halve the sweet potato and bake it in the oven and then we put toppings on as you would with a regular baked potato, things like curried lentils and broccoli etc.

I use them as a base for veggie burgers
Boil them up and mash with some other cooked veg like peas, carrots, cabbage and then we usually add some canned butter beans or lentils, crumb and either shallow fry or bake in the oven.

They also work very well in a grilled vegetable stack done on the BBQ

You can cook them and use them in Quiche

I also do a vegetable lasagne and have one layer of cooked S Potato

Just off to peel some sweet potato for some mash for dinner. YUM.
 
Sounds like you all peel your sweet potatoes? My favorite part is the skin. I just bake them, split, add a little brown sugar on top and dig in:) skin and all.

And while we are on the subject, do you consider them a veggie or carb?
 
Everyone begs for this meal in my house:

Sweet potato puffs

half # ground beef
brown with onion, drain
stir in chopped spinach
grate sweet potato and stir in shreddings

puff pastry sheets - thawed
open out to rectangles
make little mounds of the beef/sp mixture on one end
top with cheddar cheese
fold over other end and seal edges

bake until golden and fluffy
cut in half and serve triangles


I make it a little differently every time. Just put in whatever seasonings your family likes.

My family's new favorite is sweet potato fries~ I've tried to make them but they didn't come out as good as I'd hoped.
Trader Joe's has awesome frozen sweet potato fries as does Alexia brand found in most supermarkets (they have a spicy seasoned, they are awesome!)
