I am looking for a new version of the southern stable of a Sweet Potato Casserole for Thanksgiving. Just wanting to do something different. Any ideas?

I don't have the recipe, but someone brought this to a potluck one Thanksgiving - sweet potato chunks, apples, raisins, and probably brown sugar and butter. It was different but very good.
 
sweet potato casserole

3 cups of mashed potatoes
1 1/2 cup sugar
one can of coconut
1/2 cup of milk
one stick margarine
one tspvanilla
3 eggs

topping
1/2 cup brown sugar
1/2 cup chopped nuts
1/4 cup flour
one stick margarine melted

mix first seven ingredients .place in baking dish....spread topping mixture over top....bake at 350 degrees for twenty or thirty minutes.......
 
I have one from cooking light that I have used the past few years. I'll post it as soon as I get home!
 

This one came from either Southern Living or Martha Stewart so it may be the one you already use. I've Lightened it up over the years but the original is still the best to splurge on once a year.

Slice enough sweet (2/3) and white (1/3) potatoes to fill a casserole or other baking dish (depends on size of the group you're feeding)

Spray the dish with non-stick cooking spray and rub the bottom and sides with garlic

layer in half the sweet potatoes

sprinke on about 1 TBS flour, sprinkle with salt and pepper

Repeat with white potatoes and remaining sweet potatoes

Mix together1 cup heavy cream and 1 cup half and half. Pour over the potoatoes.

Bake covered with foil for 1 hour at 350 degrees. Remove foil and spread a mixture of bread crumbs and melted butter over the top. Bake for about another 45 minutes to 1 hour until potatoes are tender.

This is also yummy all mixed up later as part of the leftovers!

That Southern Living casserole is the BEST. Once you have it, you'll never go back to marshmellow-topped potatoes ever again.
 
Thanks for posting this. I had the same question. Now about that Southern Living recipe - how well does it travel? I am driving about 1.5 hrs to dinner - I can put it in one of those casserole transporters & then back into the oven at my aunt's house. Do you think it will still be good?
 
This one looks very similar to Pumba's recipe. It's from my cousin's grandmother on her other side. It is the only way anyone in the family will eat sweet potatoes...

Mammy Stinson's Sweet Potato Casserole

5 cups mashed sweet potatoes (you can use canned)
1-cup sugar
½ cup milk
½ stick butter
1-teaspoon vanilla
½ cup coconut (the flaky, sweetened kind from a package)

Combine all ingredients together. Put in casserole dish. Mix the following together and place on top of sweet potato mixture: ¾ cup brown sugar, ½ stick butter softened, ½ cup self-rising flour, 1 cup pecans, chopped. Bake 15-20 minutes at 350 degrees.
 
Here it is! I've made it the last two years and it's very yummy. I like to make extra of the topping because I love the crunchy topping.

Streuseled Sweet Potato Casserole

18 servings (serving size: about 1/2 cup)

14 cups (1-inch) cubed peeled sweet potato (about 5-6 pounds)
1/2 cup half and half
1/2 cup maple syrup
1 teaspoon vanilla extract
3/4 teaspoon salt
1 large egg, lightly beaten
Cooking spray
1/2 cup all-purpose flour
1/2 cup packed brown sugar
1/4 cup chilled butter, cut into small pieces
1/2 cup chopped pecans


Preheat oven to 375 degrees F.
Place potato in a Dutch oven, and cover with water. Bring to a boil. Reduce heat; simmer 12 minutes or until tender. Drain.
Combine the half and half and next 4 ingredients (half-and-half through egg) in a large bowl, stirring with a whisk. Add potato to egg mixture; beat with a mixer at medium speed until smooth. Spoon potato mixture into a 13 x 9-inch baking dish coated with cooking spray.
Combine flour and sugar and combine. Add chilled butter; and mix with fork until mixture resembles coarse meal. Stir in pecans; sprinkle over potato mixture.
Cover and bake at 375 degrees F for 15 minutes. Uncover and bake an additional 25 minutes or until the topping is browned and the potatoes are thoroughly heated.

If you decide to do the Sweet Potato Scallop I'd probably cook it until it was almost done so the liquid isn't quite so liquid (if that makes any sense whatsoever).

I've never tried to travel with it though so it is only a guess.

Here's the one we have passed down through generations...

Sweet Potato Casserole

1 13oz. can sweet potatoes
¾ C milk
¼ stick margarine, melted
1 C sugar
2 eggs
dash salt
1 T vanilla

Drain potatoes, add melted butter, beat. Then add eggs and beat well. Add the rest of ingredients and beat again. Pour into a 13” x 9” casserole dish.

Topping:

1 C light brown sugar
¼ stick margarine, melted
½ C flour
1C finely chopped pecans

Sprinkle over top of casserole and bake at 350* for 45 minutes.

NOTE: You can mix the casserole the night before just leave off the topping. Before popping it in the oven the next day add topping.

From one GA girl to another, thanks, I had that recipe and used it for years but after being on Atkins for the past 1.5 years I can't find it now. Now I have it for the holidays!
 
You are so welcome! There isn't much on a Southern Thanksgiving table that is Atkins friendly! :teeth:

Here you go:


Rootbeer Sweet Potatoes Sauce
Hollywood & Vine

2 C. rootbeer
1/2 cup bourbon
1 ounce lemon juice
2 ounces water
1.5 ounces corn starch
1 ounces butter
3 oz. brown sugar
pinch of ground cloves

Mix corn starch with water, set aside. Bring all other ingredients to a boil in a pot. Add corn starch mixture. Let thicken. Sauce is now ready to be poured on sweet potatoes.

Slice fresh, peeled sweet potatoes in 1/2" circles, bake in a buttered pan at 350 degree oven until soft (20 - 30 minutes). Remove from oven, pour glaze over and they are ready to serve.

Decisions, decisions, decisions!
Now I am thinking of making the
Streuseled Sweet Potato Casserole
- especially since it is featured on a the menu of the Fairmont Hotel in DC.
Of course, I will segregate a small amount into another dish and top it with marshmellows for my boys who are allergic to pecans.
 
Let us know how you like it! Even though there is raw egg in it, I always taste just a touch of it before baking to decide whether or not I want to add a bit more syrup. Some sweet potatoes are sweeter than others, so I check it before I put it in the oven. Happy Thanksgiving!
