Super Early Preliminary Plan - Can you take a look?

Okay, I know this is REALLY early, but I can only make it to WDW every 2-3 years, so it's always exciting for me to plan!

It'll be BF and myself, and we've learned we could never do EVERYTHING in one trip, so it'll be at a semi-leisurely pace with afternoon rests at the hotel or DD. This is my preliminary plan:

Sun. Oct. 24, arrive 10:30 a.m., checking into Hard Rock Hotel and go to Universal Studios. Possible dinner at NASCAR Cafe (BF loves NASCAR).

Mon. Oct. 25, Islands of Adventure, lunch at Mythos. If there is a Halloween Horror Nights, we plan to attend.

Tue. Oct. 26, go back to US/IOA if we missed anything or want to do something again. Check out of HRH and go over to POP. Will probably do some shopping in Orlando during the day and go over to MGM in the late afternoon and do the Fantasmic! package at Hollywood and Vine (I'm assuming Fantasmic! is still on at this time of year...if not, I can reschedule this to Friday night).

Wed. Oct. 27, MK in the morning, EPCOT in the afternoon. Dinner at Le Cellier.

Thu. Oct. 28, MGM in the morning, MK in the afternoon. MNSSHP at night. 5:50 PS at Liberty Tree Tavern (the earliest I could get!).

Fri. Oct. 29, check out of POP and move over to AKL. Maybe explore the resort a bit, then go to EPCOT. If there's no Fantasmic! on Tuesday, will probably do it this night.

Sat. Oct. 30, AK. Boma for dinner.

Sun. Oct. 31, depart first thing in the morning. :(

Does this sound like a good plan? We will probably squeeze in some shopping at DD at night or in the afternoons as a break from the parks.
 
That sounds like a nice leisurely pace for two adults. I really like the restaurants you have choosen for your PS. Have a great time. The best part of traveling with just two adults, is if things change at the last minute (weather conditions, not hungrey at PS time..etc) it usually is not a problem.
