Summer time chicken breast recipes needed please

Marinate in 1/2 soy sauce and 1/2 italian dressing. It is simple and really very good.
 
My family LOVES this. It is simple, looks time consuming and great for crowds. :)

Smokey Mountain Chicken

1 boneless skinless chicken breast
1 piece of thinly sliced smoked deli ham
1 thin slice of provolone (get it at the deli for the thinnest cut)
bbq sauce (preferably a smoked or sweet sauce)
diced tomatoes
chopped green onion

Grill the chicken with bbq sauce. Place slice of ham in a folded pattern over chicken. Top with cheese. Turn grill to low heat and close lid. Allow cheese to melt. This is will be enough heat to warm the ham. Remove from grill. Top with tomatoes and green onion.

I have made up to 20 of these at a time for a dinner party. Just be sure to have the tomatoes and onion chopped ahead of time for quick serving.
 
Another thing that I do is:

take chicken breasts thin them out and in the middle of them you can put ham and cheese or broccoli and cheese. I serve with baked potatoes and vegetables. This is a really good recipe and easy to do.
 

Here's a few I didn't see:

Cover chicken breast with salsa and shredded cheese, bake 30 minutes or so.

Dice chicken into large cubes, add to pasta, brocolli, garlic and oil -- my kids love this one and it's so easy and stovetop!

I think what I would do if I were you is cook up iin a variety of ways whatever amount of chicken you might be able to eat in the next month. Do some in the crockpot with the spaghetti sauce and freeze -- add green peppers, onions and mushrooms the night you eat it for chicken caccitore. Crockpot some more with BBQ until it becomes shredded. Freeze up and then serve as BBQ sandwiches or chicken tacos. Boil some breasts up and cube, then freeze in "family-size" portions. You can then make chicken salad sandwiches, chicken caesar salad, the above pasta recipe, etc. A few hours of prep/cooking and you can end up with 8-10 dinners for that month with very little work the night you want it.
 
One that I always do is marinade the equal parts italian dressing and mayo in a zip lock overnight. when I'm ready to cook I put the chicken with the marinade in the oven. Serve over rice with some veggies.
