Summer salad recipes

hello Dissers,
I've got a 4th of July barbecue in the works and need some summer salad recipes.

Any one got a good one. I don't like potatoe salad so I've never learned to make it.

Thanks for your suggestions.

I make a pasta salad with cheese tortellini, sliced bell peppers (green, red, yellow and orange) can of olives (drained) - pour a bottle of your favorite Italian dressing over it all - and sprinkle with fresh parmesan cheese gratings. It is always a big hit at BBQs here and is a little different than the traditional macaroni with mayo.

This is always a hit. I tend to not use as much dressing as the recipe calls for.

We love this salad!!!!! I have to admit that the first time I saw it I wasn't very interested (thought wow what a strange combination) but it is a very good salad!!!!! My dad loves it and requests it all the time.

Broccoli-Orange Salad
4 cups broccoli florets, (about 1 1/2 pounds fresh broccoli)
1 small purple onion, thinly sliced and separated into rings
½ cup raisins
½ cup pecan pieces, toasted
¼ cup sugar
¾ cup mayonnaise or salad dressing
½ tablespoon white or red wine vinegar
1 11 oz. can mandarin oranges, drained

•Combine first 4 ingredients in a bowl; set aside

•Combine mayonnaise, sugar, and vinegar; add to broccoli mixture, stirring to coat. Gently stir in mandarin oranges.

•Cover and refrigerate at least 3 hours.

Yield: 6 servings

I just made this one last night and it was yummy and simple. Use mixed greens (I used a spinach /baby greens blend) sliced strawberries, manderin oranges (drained) candied pecans, feta cheese and fat free raspberry vinegrette. Delicious and pretty to look at.
