Summer Crockpot Recipes

The onion soup mix does smell strong but the flavor is really good.

No kidding!
I made the smoothered pork chops that are a few posts up 2 days ago and they were really good but the house smelled like onions still yesterday! We went to my parent's after dinner that night and my mom said we all smelled like olive garden.

I made the bacon cheesey chicken from stephanie o'dea's website yesterday. It was really good. Another idea for it would be to serve it on buns as a sandwich. I was also thinking it would be good if I pulled the chicken apart and mixed everything up to make it into a dip for a party! Yummy!

Thanks for all the great recipes! Does anyone have any ideas for steaks in the crockpot? They are recipe quality steaks that I purchased through work. I was thinking about using them in faijtas similar to the chicken recipe that was posted. Also, I have some beef stew meat from Market Day that I'd like to use up. The crockpot has been awesome in this heat.

I used boneless steaks to make the Italian beef sandwiches that was posted on one of the first pages of this thread. They were awesome!

I do round steaks in the crockpot a lot. I like Salsa Verde Steak a lot.

You could probably substitute steak for chicken in the recipe I posted today for Smoky Chipotle Chicken Tacos.

bumpity bump bump. This is a great thread. Now that school is back I am already finding myself hitting drive through after dance lessons etc. Need some redirection please keep the great ideas coming.

1 bag frozen meatballs (about 32 in package)
1 jar pasta sauce

Cook on low 5-6 hours.
Hollow out some sub rolls.
put meatball mixture on the rolls.
Top with Mozzarellla cheese slices.
Put in oven for 5 minutes at 425 degrees. (until cheese is melted)

Serve with a salad...a very hearty meal!

Place in crockpot in this order....

sliced onions and green peppers (at least two large of each... usually much more)

chicken parts (I usually use leg quarters, bone-in, skinless.. bone-in thighs also work well)

more sliced onions and peppers

Two or more large cans/jars of your favorite spaghetti sauce

Quantities here depend on the size of your crockpot and the number of people you are serving.

I usually cook on medium or high for most of the day. You do have to be careful about the chicken bones because it is "fall off the bone" done by the end of the day... but thighs and leg quarters have mostly large bones.

Serve over pasta.

i posted a crock pot mac n cheese recipe a while ago, and I am sorry if someone already posted it. I make a double batch, because the leftovers are excellent
The recipe for a double batch is:
5 cups measured pre cooked elbow mac, then cook
1 cup sour cream
1 cup milk+ more if it looks dry
2 cans cream of cheddar soup
4 cups shredded cheddar cheese

Cook on low 3 hours

I made this and it was wonderful. Thanks for posting. :thumbsup2

Italian Beef

4 lbs. chuck/roast beef 2 C. water
2 pkg. Italian dressing mix 1 red pepper
1-2 tsp. soy sauce 4 beef bouillon cubes
1-2 tbs. chopped garlic

Place beef in crock pot. Mix remaining ingredients in with beef. Cook for 7 hours, shredding beef as it softens. Serve with buns or rolls.

Mine's a little different, but good: To the roast, add

1 (12 ounce) jar pickled mixed vegetables
1 (16 ounce) jar pepperoncini
1 (.7 ounce) package dry Italian-style salad dressing mix
1 (10.5 ounce) can beef broth

Yum!!
