Summer Crockpot Recipes

I'm trying salmon in the crockpot today. I based my "rub" on Stephanie O'Dea's (A Year of Slow Cooking) Sweet & Spicy Salmon recipe.

2- 1/2 lb. boneless salmon fillets
2 Tbs. brown sugar
1 tsp. paprika
1/2 tsp. Dill Mix (The Pampered Chef)
1/2 tsp. Garlic Garlic (Tastefully Simple)
2 Tbs. finely chopped pecans

Make rub in small bowl by mixing brown sugar, paprika, seasonings and pecans. Pour rub in shallow pan or tray. Coat salmon with mixture, wrap each fillet with foil to form a packet. Place in dry crockpot, cook 3-5 hours on low.

Hoping I can get the two no-fish-eaters in the house to give it a try.
 
We love French Dip sandwiches! These are quick and sooo easy!

I buy canned French Onion soup and put 2 cans in crockpot. Add Roast beef for number of people you are feeding. One lb is plenty for my family of four. Just let everything heat up. I put the soup in for about 15 minutes before adding the rb.

I toast buns with provolone cheese on top. Spoon au jus from crockpot into small cups/ bowls for dipping. Top buns with roast beef and enjoy. We do these year round! Have had them when having company over and they were a big hit!

Serve with chips and veggies and dip.

do you just use deli roast beef shaved/sliced? what kind of bread do you prefer? this sounds great, thank you :)

I made the peanut butter cup cake from that website some of you linked and took it to our neighborhood cookout last night. It was a hit! So easy and so good!
 

I have three, and they may been slight repeats of some on here, but I'm posting anyway!

1) Chicken fajitas - I put a pack of boneless chicken breasts in the crockpot with a container of chicken stock and 2 packets of taco seasoning powder.
Serve with soft tortillas, cheese, whatever.

2) Pork BBQ - Put a boneless pork roast in crockpot with two bottles (or one large) of Sweet Baby Ray's BBQ sauce. It just falls apart at the end of the day. We use ours for sandwiches.

3) Italian Sausage - Put Italian Sausage links in crockpot with a large jar of Ragu (or whatever sauce). Cook all day. Come home and think that someone's Italian grandma has come for a visit. Cook a pot of spaghetti noodles...enjoy.

the chicken fajitas sound wonderful. im defenetely going to try this recipee!! thank you for sharing this one.
 
I love this thread!! Just went back to work after being a SAHM for 13+ yrs and dinners have been rocky to say the least...tried the chicken w/ Frank's Wing sauce last night...all 3 (fussy) kids said it was a keeper...LOVED it!!! I used skinless chicken thighs, turned it on high for 9-10 hrs...so tender, shredded perfectly, served with baked potatoes I placed in the oven on a timer. As OP said, be sure to find Franks Wing sauce, not hot sauce (only one supermarket here carried it). I'm going to try a few more crockpot meals this week from this thread.
 
One of my families favorites are crockpot porkchops and gravy. I buy the boneless pork sirloin chops because they're bigger, but any boneless porkchop will work. I place 4 in the crockpot and sprinkle half a pkt. of lipton onion soup mix on top, one can cream of mushroom soup, half a can of water...then the next 4 chops, remainder of soup mix, another can of cream of mushroom soup, another half can of water. Make sure the liquid covers your chops. Cook on high 4 hours then reduce to low until they fall apart. Makes the most melt in your mouth porkchops and the thickest gravy. I serve with mashed potatoes and whole kernal corn. :)
 
Italian Beef

4 lbs. chuck/roast beef 2 C. water
2 pkg. Italian dressing mix 1 red pepper
1-2 tsp. soy sauce 4 beef bouillon cubes
1-2 tbs. chopped garlic

Place beef in crock pot. Mix remaining ingredients in with beef. Cook for 7 hours, shredding beef as it softens. Serve with buns or rolls.

This was so fantastic. I put this in the bottom of the crock pot. Then I cut up chunks of potatoes. Wrapped them in foil and put them on top of the meat. Then I got ears of corn on the cob from wal-mart for $.25 each (did not shuck them) layed them on top. It was GREAT!!!!!

Thank you to the OP for the chicken and salsa dish!! It was fabulous! When I served it, I shredded some cheddar on top so it melted on the way to the table :thumbsup2
I also cut up some green peppers and they cooked under the chicken, yumm!

But, I have one to throw out there too....chicken fajitas. I toss in a few frozen boneless chicken breasts, add a sliced onion, sliced green & red peppers and a pour a jar of salsa over it. Cook on low all day. Fill up the flour tortillas and we just have with chips & salsa or cheese dip!

My family would like that!

I made the other poster's ital beef sandwiches also and used your idea for the potatos. So easy and awesome! My DH loved it so much he wanted it again 2 days later.:)

Sure...making it again right now...

1-2 lbs boneless skinless breasts or thighs (I usually make the skinless thighs)
1 bottle of Frank's regular WING sauce (not hot) and not Frank's hot sauce (wing sauce is in a bigger bottle)
Put chicken in crockpot, pour entire bottle over chicken, turn to high for 9 hours. Shred and enjoy plain or on buns.
 
We love Chicken Salsa burritos

3 chicken breasts cut into strips
1 can black beans (drained and rinsed)
1 jar salsa (I use 1/2 specialty salsa, 1/2 cheapo)
left over corn from corn on the cob
1 tbsp taco seasoning
1 small amount of any type of cheese. (this time I had some generic velveeta that I am putting in, but have used cheddar, monterey, and even cream cheese)

Cut chicken strips, add salsa and black beans,and seasoning cook on high around 3 hours, add corn, cook a bit, then add cheese until melted. Serve over rice, corn tortilla's or in flour tortillas.

I usually only put out fruit with this meal in the summer, so it is extremely easy.
 
I have been having a hard time getting roasts, beef or pork, to fall apart this summer...could it be the heat? I didn't used to have a problem. Could it be the crock-pot, am not cooking long enough? Maybe it's the cut of meat I'm using. I should buy loins but Giant often has cuts on sale for Buy One Get One Free. The only thing I avoid is London Broil. No matter how many times I've tried and I can not get it to turn out tender.

I made a rump roast yesterday, cooked it on low for 10 hours, but was disappointed when I couldn't pull or shred it. I could slice it rather easily and it was tender, but not quite enough for DH to enjoy fully. I salted and used a cup of liquid, and had sweet potato chunks, onion and mushrooms in the bottom. The flavor was okay, just wanted to be able to pull it apart.
 
I just made this

Working Man's Roast
1 rump roast
1 can cream of mushroom soup
1 envelope dry onion soup mix
2 t worchester sauce
1/8 t salt and pepper each
1/4 t garlic powder and seasoned salt each

put rump roast in crock pot. Mix all other ingredients and pur over roast.
cook on low for 8-10 hours or until tender.
Slice for sandwiches.
after I take out the roast I add a little cornstarch to make a gravy.

Leftovers our great too.

We use a similar recipe for shredded beef sandwiches.

1 chuck roast
1 can of cream of mushroom soup
1 packet of dry onion soup mix


Put chuck roast in crock pot, pour in soup and onion soup mix, and stir, put some on top of roast. Cook on low for 8-10 hours, shred beef and stir.

Put on sandwiches and enjoy....super easy!

Sometimes we use half chuck roast and half pork roast when doubling the recipe, and it turns out great as well. The onion soup mix does smell strong but the flavor is really good.
 
Here's a couple that I love to make and I don't see anywhere on here.

Buffalo Chicken Dip
2 large cans of chicken (like tuna in cans)
3/4 c. hot sauce
1 and 1/2 c. Hidden Valley ranch dressing
2 c. shredded cheese
I'm not much for measuring so add more or less to your liking. Keep an eye on it and stir continuously, cook until gooey!

Sweet and Sour meatballs
1 large bag of Italian style meatballs
1 large jar of Welchs grape jelly
after the jelly jar is empty fill it with either ketchup or chili sauce and dump in.
cook all day on ow and serve of hoagie rolls

Roast and potatos
any type of beef roast seasoned with your favorite seasoning
pour 2 small cans of cream of mushroom soup over
grab a dozen or so of those baby red potatos and half them and put them on top
Cook all day and serve with a salad and corn on the cob. The soup and juice from the roast make a wonderful brown gravy

Rotel dip
1 lb of Velvetta cheese cubed
1 lb of cooked ground beef or turkey, lots of seasoning especially garlic powder
1 can of Rotel with green chilis
1 jar of diced black olives
Cook until cheese is melted and serve with tortilla chips

Frito Pie
I follow the chili recipe on the package of McCormicks chili seasoning but I throw it in the crock pot and cook it all day. Make sure the meat is browned 1st lol.
layer a plate with frito chips, chili and then your favorite toppings...mine are shredded lettuce, diced tomatos, sliced black olives, guacamole, sour cream, salsa and shredded cheddar cheese. Basically any taco toppings will work. Enjoy.
