My very favorite! I leave out the carrot though, and usually double the recipe.



Summer Zucchini Casserole

"Zucchini, onions and carrots are baked in a creamy concoction of stuffing mix, cream of chicken soup, sour cream and butter."

Ingredients:
2 pounds sliced zucchini
1/4 cup chopped onion
1 (10.75 ounce) can condensed cream of chicken soup1 cup sour cream
1 cup grated carrots
1 stick unsalted butter, melted
1 (6 ounce) package chicken
-flavored dry bread stuffing mix

Directions:
1. Preheat oven to 350 degrees F (175 degrees C).
2. Boil the zucchini and onion in water for 5 minutes; drain well. In a medium bowl, combine the soup, sour cream and carrots. Stir in the zucchini and onion and mix well.
3. In a separate medium bowl, combine the butter and stuffing mix. Spread half of this mixture into the bottom of a 9x13-inch baking dish. Spoon the zucchini mixture over the stuffing, then top off with the other half of the stuffing.
4. Bake at 350 degrees F (175 degrees C) for 25 to 30 minutes, or until stuffing is golden brown.

Nice stuff. I plan on sharing the mock crab cakes.

I work at freezing tons for the school year, but it has to fit in the freezer with half a cow, and a bunch if chickens!

This is my first year with a veggie garden and I have learned a lot.... mostly that 4 zuchinni plants is too many!

I have been making stuffed zuchinni about once a week using sweet italian chicken sausage, onions, peppers, brown rice and diced tomatoes with the bigger zuchinni. It has been yummy and easy to do.

The smaller zuchinni we have been slicing lengthwise into ~4 slices and lightly brushing with olive oil, a little seasoning salt and onion salt on the grill and they are FANTASTIC!

Zuchinni bread and muffins

Fried Zuchinni, dipped in egg wash and fine parmesean breadcrumbs and fried in a little olive oil on each side

Overall it has been a wonderful experience gardening and I am hooked! Looking forward to more recipies!
