Suggestions for busy crowd times?

We are going during Feb school vacation for 8 days. We dont usually go during peak times, but really dont want to take DD out of school (besides, she summarily informed us that she will NOT miss any school this year :teeth: ).

That being said, what recommendations do you have for other things to do when the parks are really crowded. These can be either in park, lesser known activities, or elsewhere on WDW property. We are already planning to do mini-golf at WinterSummerland and maybe watermice if the weather holds. What else do you do when it's really busy?
 
Actually, I don't think February is ever really crowded. The weekends may be a bit heavier than the week days, but you should be good.

We have been going over Christmas for many years and here are my suggestions
1. Make ADR or you will be eating a lot of hot dogs and pizza
2. Get to the parks early, I mean at opening. We just got back and on 12/24 we hit MK at 8AM and did the mountains and buzz in the first hour.
Febuary weather should be decent, maybe a water park or the pool.
