Suggestion for Vegetarian Entree?

Has anyone had a vegetarian entree either at their tasting or at their reception that they would recommend?
 
For our vegetarian brunch feast, our main dishes are:

Asian Salad with Edamame (like a pasta salad, but done Asian-style. Very tasty).

Risotto Cakes with Kalamata Olives and Artichoke Hearts (funnily enough, I normally hate kalamata olives and artichoke hearts, but the Disney chefs are so amazing that I actually loved this dish! Risotto is often made with chicken broth, but Disney made ours vegetarian, and it was delicious. The olives give enough salt, and the artichokes made it buttery. MMMM).

Penne Pasta with Artichoke Olive Oil and Julienne Vegetables (I hate weddings/events where the only vegetarian option is pasta with vegetables. So boring, so uncreative, usually not very tasty. But Disney did a nice job, and it's a good dish to satisfy most people).

On the side, we'll also have Yukon Gold Roasted Potatoes, Mickey Roni n Cheese, bagels and cream cheese, and two stations: eggs and omelets made to order and a crepe station.

Cam, I can't remember if you're having breakfast, lunch or dinner, but I would also suggest that you talk to your chef. They came up with all the ideas for us; we just told them which ingredients were out. If you need a vegan (no eggs or cheese) dish, I'm sure they could whip something up.
 
We looked at all the menus from the restaurants around the parks/resorts, and chose a vegetarian option from there.

I'll let you know how it goes at our tasting in a couple of weeks. Two weeks today, actually!

Sunny - WOW! Your menu sounds delicious!! We are doing a pre-reception of muffins, danish & fruit. The reception will be noon - 4pm, so it doesn't have to be anything too heavy, but we are, in fact, looking at dinner menus and I wanted to have a really nice vegetarian option. I thought some kind of tortellini with an alfredo sauce & peas might be nice. Heavy enough for a real meal. This would also work for our friends who keep Kosher. It would allow us to choose one item that would suit both our vegetarian and our Observant friends. What do you think?

We are also doing a brunch and have most of the same items that Sunny has on her brunch. The same pasta, we are also doing cheese crepes, make your own omlets, bagels cream cheese and lox. We tried the pasta and crepes last week and they were both great.

Linda -- That sounds great. Almost makes me wish we were doing brunch foods. The cocktail hour is going to be very simple and the reception is going to be along the lines of a dinner. I agree with Sunny that often the only vegetarian entree is some kind of pasta with grilled or marinated veggies. I am still racking my brains to come up with something a bit more unique. I may go check out the WDW restaurant menus. I've also posted a question on the restaurants board, and will let everyone know if anyone there suggests something intriguing. ;)
 
As far as veg entrees from the regular restaurant menus, I've liked the veggie lasagna from Chefs de France (as the person on the restaurant board mentioned), the potstickers at Artists Point, the vegetable plate at Narcoossee's, the mixed grains dish at Jiko, the flatbread appetizer at Jiko...and veggie sushi is always good!

Also the mushroom soup at Artists Point was amazing. And as an FYI, the cheddar cheese soup from Le Cellier is not vegetarian.

Thank you for all the suggestions. And definitely thanks for the heads' up about the cheddar soup. I wouldn't have guessed it wasn't vegetarian. That's good to know.
 
Citricos has seared tofu with zucchini, eggplant, tomatoes, mushrooms, lentils, sun-dried tomato coulis; the Moroccan place in Epcot has veggie couscous, and you can check out the extensive Victoria and Albert's vegetarian menu: http://www.allearsnet.com/menu/menu_vaveg.htm (this looks old--I'm sure they have a newer one). My advice is to go simple and light. Ask the chefs if they can do anything with seitan (wheat gluten); it looks and tastes very meat-like, and it's not as common (or boring) as tofu.
 
Just wanted to add:

We are having a plated dinner of several courses with lamb/duck as the entree and I have two vegans coming - the Disney Chefs are making them a full vegan dinner with every course present. All I had to do was ask and I am not being charged extra or anything!
 
we had a vegan at our wedding dinner. the Chef at narcoosse's came out and spoke to her and made her something special. I'll have to ask her what it was because she said it was the best vegan meal she'd ever had (of course she only went vegan at the beginning of the year ;) , but still it must have been pretty good)
