We have friends that are total vegan, no eggs, oil, milk etc....
I made cookies for them one year so I'm breaking out the vegan book for you. The title is How It All Vegan by Tanya Barnard and Sarah Kramer.
It says you can use applesauce as a replacement for 3/4 of the called for butter.
The replacements for oil are:
organic cold pressed oil found in health food stores
Olive oil- can be used in baking
Sunflower, safflower, canola,vegetable oils- can be used in baking
sesame oil- strong taste: not good for frying. Excellent for salad and asian recipes
flax oil- Do not use for cooking. Use for salad, or in place of butter on popcorn, potatoes, and rice.
I used the applesauce in cookies, it worked ok and they said the cookies were good but they were not the consistency of the ones I usually make.
Forgot to say that I couldn't taste the applesauce but it did seem to miss the creaminess of the butter.
