I don't have any Sake, and I am not going to buy some just for 3TBS. I was wondering if there might be a good substitution for this recipe:

http://www.food.com/recipe/broccoli-with-garlic-sauce-228140

* 4 cups broccoli florets
* 3 garlic cloves, minced
* 1/2 cup low sodium chicken broth
* 3 tablespoons sake
* 2 tablespoons low sodium soy sauce
* 2 tablespoons oyster sauce
* 1 tablespoon cornstarch
* 2 teaspoons sugar or 2 teaspoons Splenda sugar substitute
* 1 tablespoon oil (for cooking)

Directions:

Prep Time: 15 mins

Total Time: 20 mins

1. 1 Combine broth, sake, soy sauce, oyster sauce, cornstarch and sugar in a bowl & set aside.
2. 2 Heat a large nonstick wok or skillet over medium heat; add oil. Once the oil is warm, add garlic and stir-fry until fragrant. Add the broccoli (and any other vegetables if desired) and stir-fry for 3 minutes or so, until slightly tender. Add the sauce mixture and stir constantly until sauce boils and thickens. Serve once sauce and broccoli reach desired thickness and tenderness.

According to a Google search you can use:

"sake = saké = saki = rice wine. Pronunciation: SAH-kee. Notes: This is a Japanese rice wine, or more correctly, beer. It's usually served warm in tiny porcelain cups, but some trendy American restaurants served it chilled like white wine. Substitutes: Shaoxing wine (not as smooth and sweet) OR dry vermouth OR white wine OR dry sherry."

Another site recommends rice wine vinegar, if you want a non-alcoholic substitution. Makes sense since sake is a rice wine.

I would substitute dry sherry.

It's pronounced sah-kay, not sah-kee though (IPA: sa'ke). I don't know why Japanese words are always butchered, but they are.
