Strategy for Memorial Day Week?

We just booked a trip for May 24-31 - Memorial Day week for DH, DD (3 1/2) and DS (almost 2) and I. If it were just us, we'd probably spend Sat & Sunday just enjoying free stuff, and wait to hit the parks til Monday. We'd hit Epcot and MGM first and save MK as to not build false hopes for the kids that all days would be like that. But now there's family joining us just for Memorial Day weekend, and we feel like we have to go to MK and AK while they're there.

What do you think is least crowds? Sunday at MK (should be early in, but that builds crowds) or Monday at MK (which is historically it's busiest day.) Ugh. Decisions, decisions.
 
We will be there during that time also. I am avoiding the EE park of the day because by lunch time it is a madhouse. This is what we are doing, now take into consideration we have APs. Arrival day (SAT-24th)-EPCOT just to see Illuminations, (SUN-25th)-AK, (MON-26th)-EPCOT because the park is huge and even when it's crowded it isn't as bad as the others. (TUES-27th)--Downtown Disney in the morning and EPCOT in the evening, we have a PS at Garden Grill. (WED-28th)-MK, (THURS-29th)--MGM we have Fantasmic dinner package that night, (FRI-30th)--MK we have dinner PS at Liberty Tree, (SAT-31st)--AK, (SUN-1st)--MGM STAR WARS WEEKEND and last day at the parks, we go home Monday. 00
