Staying 3.5 days

Our hotel and flight is already booked. We can't cancel the flight without costing us a fortune. I recommended this as well, but since we don't have any "adults" (parents) on the trip, everybody thought staying on site was better.

Uber is going to be a wasted expense in your case. I recommend you take the resort bus.
 
Have you thought about doing Whispering Canyon Cafe at Wilderness lodge as soon as you arrive so that you will not be missing park time and then head over to Epcot afterwards for the rest of the day. That would leave the 5th completely open to do whatever you want.
We wanted to do the breakfast, and by the time we are off the Magical Express, drop off our bags, and then get on a bus to WL, it won't be breakfast time anymore, otherwise we would do that.
 
I think we're just going to wing this one. I feel that stressing about the plans is only making the idea of this vacation feel "weird" in a way, that's not making me excited about it, if you know what I mean. I'm lucky I get to go in the first place, anyways.

I would at least make some FP's and if you change your mind change your FP's.
Don't worry it will work out and be fun. I always stress out about plans before we go then when we get there we forget about some of them and do something else. But yeah get FP's for your favorite rides.
 

It is sad but true,,,going to Disney can be difficult without plans. BUT going with a positive attitude will always
help. I agree with maryj11 , make some FP+ ,,you can always try and change them if needed.

I would get rid of the idea to park hop. You want to save money and dont feel rushed. Not hopping makes more sense to me then spending money on Uber that might give you 30 minutes extra in a park. Especially as everyone seems to have been there before. Your trip is very ambitious in my eyes, with and riding rides several times and meeting characters and taking time to look for hidden Mickeys plus several meals that need to be done. All in 3.5 days without rushing.

I would go for the suggestion above for which park to visit on which day and make choices/lower your expectations that it won't all happen on this trip. Save some for the next trip.
