I won't give an opinion on the order of the movies, as I know that can be touchy
I will say my DS-4 and DD-9 both love Star Wars, they have seen most of the movies but the original 3 and number 7 are by far the favorites! I have not let either see Rogue One yet, as I think it is a bit dark for them yet.
As far as things to do with the kids in DHS, both of my kids did Jedi Training and absolutely LOVED it! DS was a little nervous at first, but it helped that his sister was with him. The Stormtroopers are so much fun to interact with, I highly recommend them, even just to watch from a distance. The March of the First Order is very cool, but if either of your kids have any issue with fireworks it may be best to watch from a distance the first time. Kylo Ren is a little bit intimidating, but still very good and Chewy is AMAZING!!
We have been able to spend multiple days in DHS on our vacations because the kids (and my DH) love all of the Star Wars fun!!!
