Spring Pantry Challenge

I am late on this so yesterday cleaned out the kitchen fridge and freezer and cataloged the contents which took 3 hours! Today will try to do the freezer in the garage. Found frozen flounder fillets from Kroger which I baked with butter, white wine, capers and lemon. They were edible but not spectacular I think because the fish was not so good. (I usu buy fish fresh or if frozen from Costco.) Hubby thought they'd make great protein for the dogs haha. Served this with baked potatoes from huge bag I bought last week and peas. I think tonight may make pot pie as I have a pie crust and chicken with veggies/potato soup.
 
Tuesday--dinner out; Runza (local chain--"cabbage buns"--kind of a calzone w/ spiced meat and very thinly shredded cabbage--most kids don't even realize there is cabbage in it; it is a very popular chain) offers Tues in Jan--Runza for price of temp at 6AM--which was below zero, so FREE (well, you have to buy med fries & drink)...

I have a recipe for a Runza Casseroled that we make in the summer when cabbage is plentiful. It is pretty good.

Last night - DH did wings and frozen pizza which was on the menu for today.

So toinght will the the casserole that was on the menu for yesterday.

Lunch today is a meeting at work so work will probide. DH can have leftover pizza. DS will eat at school.

Change of menu plans I had today; lunch was a pasta salad I made, and dinner was grilled chicken, spinach salad, and snow peas.

I used up a box of pasta, peanut butter, a bottle of marinade, and the rest of the produce I had, so I'll be going to the store tomorrow.

I love love love spinach salad and snow peas! Mmmmmm. Now I'm hungry.
What kind of pasta salad did you make? I like noodles, black olives, carrots, grated parm, and italian dressing.

It will take forever for us to use up our peanut butter. We currently have three huge jars of it!

Today I had a very lazy day. We were suppossed to go to a movie with my Aunt and cousin but they live a 1/2 hour away and the weather was being unpredictable. So instead we tayed home and watched movie with hot chocolate.

For lunch we had left over spaghetti and meatballs (mom) and I had a tortillia pizza.

Dinner was sloppy joes with tater tots and grapefruit.

I had spaghetti and garlic bread last night. Leftovers will be tonight (and maybe lunch tomorrow too.)
 

Someone gave me lots of the Pillsbury buttermilk biscuits and short of making biscuits every night, I was wondering if anyone had any ideas on how to use them up (like 12 cans!!)

Might make a mashed potato cake this weekend since it is so cold here--will make it with leftover mashed potatos and sour cream.

Flatten them out and make them into mini pizzas. We also like to flatten them and put them into a muffin pan. Fill them with barbeque pork or chicken mixed with a can of cream of chicken soup, some vegetables and some grated cheese and bake them. That's a great way to stretch veggies. Another great idea that my mom came up with is to cut them in 1/4ths and roll them around in a beaten eggs. Then fry them in a pan with some butter. YUMMY! That's what we had for Christmas breakfast.

Chicken and Dumplings

1 soup chicken
equal portions of water to chicken stock
1-2 cans cream of chicken soup
3-4 cans of biscuits.

Boil chicken in water until cooked. Pull out chicken, set off to cool. Scim the water and add as much chicken stock to double it. Bring to a boil. Add soup and whisk til mixes. Keep at a rolling boil. Open the bisquicks and flatten with your hand or a rolling pin (no flour). Cut bisquicks into thin strips, drop into liquid. They will pop to the surface, but keep adding and stirring. Dumplings will look like a thick noodle when they are done. Reduce heat and stir occasionally. Take chicken off the bone, add to soup. Enjoy.

*While boiling the chicken you can add celery, carrots, and onions based on what your family likes. We like our dumping soup plain.

I like using biscuits for topping casseroles.
 
I stayed on point this week and am quite excited about it. My grocery trip with toiletries and Sam's club was $60.00. Well below my normal. I haven't even changed up my weekly menu yet. Definetely was hard though, I really wanted to eat out. So I immediately went in the kitchen and prepped the onions and potatoes, so no going back now. No one else has posted pictures, so for now, I think I wilk keep the camera out of the kitchen.

Need to do inventory for next week soon.
 
So I've been baking today. I just took some pumpkin muffins out of the oven. That used up the vegatable oil, a can of pumpkin, half a bag of slivered almonds and half a bag of white chocolate chips. I didn't have enough oil so I used up the rest of my homemade applesauce from the freezer. It made them a little more healthy anyway. I know they sound weird, but they're really good. My two year old is on her second one right now. right now I have some banana bread in the oven which used up some bananas from the freezer ans some questionable sour cream from the fridge. If I still have the energy I may finish off some cookie dough I have in the fridge and make some white chocolate macadamia nut cookies.

Last night my dh brought home some chicken noodle soup that a friend of his made, so we'll have pork chops and mashed potatoes and green beans tonight. We did have grilled cheeses with the soup and finished off a package of american singles so we were still using things up.
 
Not sure what I'll be having for dinner tonight, as I don't feel like cooking, and I just snacked on stuff for lunch. Dinner will probably end up being leftovers, as I have pasta salad, carrot salad, chicken, and crab stuff leftover.
 
Dinner tonight is Panera. My mom went over to my Grandma's to help her sort out her sewing room and my grandma offered to buy us all dinner.

I baked the chicken drumsticks last night so we will have those tomorrow night.
 
Diner was pork chops, rice, pea pods and apple sauce.

Tomorrow I am making a chicken casserole with pasta and crushed tomatoes and and cheese.
 
Here's a recipe for Monkey Bread which uses 4 tubes of biscuits

Monkey Bread

4 cans refrigerated buttermilk biscuits
1 cup sugar
2 1/2 teaspoons cinnamon
3/4 cup brown sugar
1 1/2 sticks butter or margarine

Cut biscuits into quarters. Combine 1 1/2 teaspoons of cinnamon with the sugar and put into plastic bag. Put cut up biscuits into bad and cover with mixture. Put into a bundt pan. Bring the brown sugar, 1 teaspoon cinnamon and butter to a rolling boil. Pour over bread. Bake at 350 degrees for 40 minutes. Invert immediately on serving plate.
 
Continuing with eating better & what's on hand.

We had Breakfast for Dinner.
Omelets loaded with vegies. Red peppers, onions, tomatoes, a little ham & cheese.
Kashi blueberry waffles
Strawberries dipped in Smuckers sugar free chocolate syrup.

So we are having our first real snow of the season and they have cancelled all the local schools around here so today is a good day to stay indoors. I plan on baking some breads today to use the oven to help warm up the house a little more.

Breakfast is whole wheat toast with peanut butter, banana, and orange juice.

Lunch will be whatever you can find in the fridge.

Dinner is either going to be the chicken drumsticks with rice pilaf and corn or potato and double corn chowder soup with roast beef sandwiches. Soup just sounds really good today.
 
Another really cold day here today, so I'll probably do some more baking. Maybe some bread to go with dinner tonight.

Breakfast is muffins or banana bread from yesterday.

Lunch left over veggies from last night. Probably a peanut butter sandwich for my dd. She's on pb kick lately.

For dinner I'm thinking of making potato soup tonight. It's so cold I think that will really hit the spot.
 
Good morning all. I have been doing really well at this but am amazed at how much planning and thought it is taking me. I have been checking the fridge frequently to make sure I am using stuff up and pulling out half bags of this a little of that and using www.Allrecipes.com to come up with inventive ways to use things. I have an extra incentive to try to use garden things I have stored in the cellar before they go bad.

So day before yesterday I noticed a couple of my pumpkins were starting to develop black spots so I peeled them and cooked them up, Voila, pureed pumpkin. I made a couple of pumpkin breads with nuts, the kids ate for snack this week. Than today I made Cinnamon Pumpkin French toast out of some of it. The last little scraps went to the dog and some to the chickens. Not an ounce of waste. Last night for dinner I had leftovers but didn't think I had quite enough so I had DS11 cook up a pot of his Chicken Tortilla Soup which we had as an appetizer and than it was smorgasboard night.

So breakfast was french toast and we shared a banana.
Lunch will be some leftover homemade Chicken fingers and the soup that's left with some raw veggies out of the veggie drawer.
Dinner will be roast chicken. I have half of a zuke so I will use it to make a mini Zuke casserole, mashed potatoes and probably a can of green beans. A meal practically all out of my yard. :rotfl:

It's snowing like crazy here......may clean out the freezer later, who knows what I will find.
 
You all are doing much better than I am!

I had to go to the store for the basics....bread, milk, toilet paper, dog food etc...but I was hungry. OOPS! :lmao: Well, actually it wasnt that bad and I got stuff that at least I'll use up quick and not sit around. (like the Krispy Kreme triple chocolate cupcakes) :rotfl2:

Last night was reuben sandwiches and that will be lunch today too

Tonight is home made pizza and that will also be either a snack later or breakfast tomorrow.

Not sure about the rest of the weekend. I have some salmon in the freezer I need to use...
