Spring Break and "non" headliners?

I have been following a number of threads on FP+, lines etc.
Traveling party 6 adults
3 college age boys
2 tweens also boys
2 young boys 5,7

We are traveling Mar 17-25, planning on spending 1 day at MK, 1 day at Ak. As well as universal/ Islands and a day at Busch

We have FP+ booked and I am looking for opinions on things to do during busiest part of the day with the youngest of our boys. Is there anyway to not be stuck in a gridlock pattern? What are your favorite activities away from the main headliners
Tom Sawyer?
Shops?
Casey Splash station etc

At AK the lines were long for everything from 12-6 this week. The trails for animal viewing we're great and many of the animals were active especially birds and bats. also the boneyard play areas and shops were manageable. At MK it was insane this week so I would look at shops, ride the railroad, tom sawyers island, tiki room, hall of presidents and country bears are slow. Also many are inside with air conditioning and seats.... Have fun!
