Special occasion meal - Where to go?

My best friend is turning 40 this December. We're hoping to go to Disney for that and I'd like to take her out for a nice meal for her birthday. V&A is out of the question, not due to cost but I am much too picky of an eater for that one. She's not nearly as picky as I am, and as long as I can find a chicken or pasta dish on the menu, I'm usually o.k.

So... where would you take her and why?
 
Captain's Grille at the yacht club... cause it is quiet and few kids. great service and hard to find something that is not good on the menu. if you wanna get a little fancier, do yacht club steak house.
 
Narcoossee's ( i can never spell that right) its at the grand floridian and if you get a later time you can see the fireworks from the resturant
 
Jikos at AKL is very romantic but may be a bit too fusy a menu for you (I have to admit Im quite similar and although I found something to try on the menu I probably wouldn't have gone there if others hadn't wanted to). Artist Point is lovely too as well as the Yachtsman and both have a plainer menu than Jikos.
 

Jiko! Great, quiet, adult atmosphere - excellent service - great wine list. Menu seems fussy, but when you break it down they have some really basic foods with fancy descriptions =)

I celebrated my bday there 2 years ago, and took my meat and potato FIL, and he loved the pork dish.
 
I'm a picky eater, and I adore Yachtsman Steakhouse. :thumbsup2 Another nicer, more special restaurant I enjoy is California Grill.
 
I'll echo the California Grill recommendation; the menu there works for both picky and non-picky people. If you're not really interested in beef (you mentioned chicken in your OP) that rules out a number of the steakhouses (since steak is clearly what they do best). If you do enjoy beef, Shula's is awesome and Yachtsman is also good.

I'll also throw Flying Fish out there (don't know if you're into seafood) as a great option. Because of the open kitchen the ambience is different than some of the other restaurants already discussed, but it's still one of the best restaurants in WDW. They have a shellfish-based pasta that I thought was really special (and I'm picky when it comes to seafood).
 
what about the House of Blues, they have some awesome pasta.
